    Next up, a collaboration West Coast Pilsner.

    Roaring Table / Hop Butcher Far Out Cool Pool

    Taproom Notes:
    $7 16 oz draft, West Coadt Pilsner.

    A truly far out collab with our friends at Roaring Table. Brewed at their place. Crisp, Bright and Hoppy.

    Appearance: Listed as a 16 oz draft pour into a nonic glass Clear straw golden pour, light carbonation, bright white head leaves consistent ring above the base and ********* pattern over it. 4.5

    Aroma:
    Tropical lead, tangerine, pineapple and grapefruit, backed lightly by peach, pine and citrus. Interesting and unexpected. 4.0

    Taste:
    Bursting with tangerine, pineapple and pine. Typically just ok on my end, but digging this as well.

    Mouthfeel: Light, crisp and easy drinking. Neutral to light bitter lead over sweetness, like the balance and taste profile. Firm light fizzy carbonation felt through giving added depth to an otherwise light body. Clean finish. 4.5

    Overall:
    Another unexpected winner here. Nice to see Hop Butcher spread their wings here, and another great beer from the folks at Roaring Table. Hope this one returns down the road. 4.5

    Will close out here with a style Hop Butcher is more know for, even though I’m less known for ordering. Stay tuned.

    We took the dogs for a nice long walk, and now it's time for beer and football.
    I'm drinking Madame Psychosis, a NEIPA brewed by Fiction Beer in Denver.
    Hazy pale yellow color with a small white head and a bit of lacing.
    Aroma of citrus and pine.
    Taste of grapefruit, orange, and pine.
    Nice hop bitterness.

    first time posting in this thread. hope everyone’s NBS is great! have here a Toppling Goliath Seismic Sue crowler filled yesterday at TG. kept cold in a cooler the journey back and immediately put into the kitchen refrigerator upon arrival back home.

    look - dark, hazy orange with a soapy, off-white foam head. 4.5

    nose - aromas of candied oranges and peach for the most part. 4.75

    taste - big citrus with a ferocious hop bite. some alcohol burn as it warms over the course of the pour. 4.25

    mouthfeel - full; perfect amount of carbonation to not make it too thick. 4.5

    overall - not as good as King Sue or DDH KS but for what it is, it’s enjoyable. pretty unapologetic in its Triple form. 4.5

    I got a four pack of this last week, and it improves in my mind with each can I have. Your impressions could've almost been dictated from my head. I agree that it's very dry and the malt and hops are a nice pair, but I think the smoke is a bit more prominent in the taste than I read you did. I think the smoke plays in with the dry grassy hops in a way that hides it a little bit, though I must say I am noticing it more with each can (today was my 3rd of the pack), and am happy that I am.

    @WesMantooth nailed me with Bodhi and Creeper and I concur, those are great beers. If they were local to me they'd be regular players in my fridge lineup. So there's another great IPA from them?

    Hop Butcher For The World Destination Moon

    Taproom Notes:
    $8.00 plus tax 16 oz draft served in a nonic. 7.5% Double IPA.

    A clear beer double IPA rocket launched at he moon and crash landed between the citrus and pine craters.

    Appearance: Faint carbonation, yellow golden lightly murky pour, bright white head leaves nice cover over the base and dusting above the entire base. 3.75

    Aroma:
    Dankness reigns, and it’s wonderful and glorious. Citrus slightly over pine. No, check that pine over citrus. I think I’m in for a treat. 4.5

    Taste:
    Yes, this is where it’s at. Much lighter than the intense aroma in strength, a lighter though still carrying substantial depth and strength. Mellow, piney, light pulp. Yes. 4.25

    Mouthfeel:
    Dry, lightly bitter, drinks at to under ABV level, dank mess lingers on an enjoyable manner. 4.25

    Overall:
    If you like a nicely dank piney old school experience on the light / approachable side, this is a nice beer to order or bring home. Declining a to go carry out solely due to the fact my refrigerator is bursting with beer. Will bring home down the road when my predicament is rectified. What an enjoyable morning / early afternoon at Hop Butcher For The World. 4.25

    Kids and dogs are fine, but their “parents” can range from just fine to bad actors/actresses, the latter more often than not recently at Spiteful. The latter will determine whether I return shortly with another beer within the hour, or whether I just bring their 10th anniversary beer home for a future weekend review.

    Hop Butcher is definitely a brewery you should consider if you find yourself on the Northside of Chicago down the road. Really glad I started my beer day here.

    ...well, Jack certainly loves to geek out with most things related to beer production, so I figured he'd love to hear about Cycle's take on bourbon barrel aging and its impact on overall ABV...:grin:

    Yup their single IPA…here was my take on it; I rated quite hi, only cause I’m forced to rate the beers I enjoy tend to be super high like this one oh well it can’t hurt to bring up its average. Maybe it’ll make one of these “lists” that keep getting posted :stuck_out_tongue:

    i get it’s a complicated process and that it’s typical for barrel-aging to raise the ABV, but they can’t come within a range (like, 11-13%)?? go with the high end. for an inexperienced beer drinker, stating 13% would be more useful than stating nothing.

    ...Cycle's response to me was (my bold highlight)..."Since the government has seen fit to not require this information on labels, and there is a penalty if you do publish it and you are wrong, we have opted not to publish and we can offer an approximation for inquiring minds..." (which is what I did when I contacted them about another beer of theirs...

    Yea, it really did. I'm not used to that with IPAs, but it certainly applied here.
    I had that one in cans and loved it - really quite a good beer.

    To clarify, I don't think the beer is evolving (it has only been a week), just that I am noticing/appreciating the level of smoke more each time, for whatever reason. As a side note, I also wonder if the beer wasn't so dry, would the smoked malt come out more distinctly as a counter to a light sweetness, since to me smoke can have an effect similar to drying out a beer.

    Mine was bottled on 09/19 and was stored at room temperature until right before I wanted to consume it so it's highly possible that the flavors mellowed a lot by now. But with many high ABV beers minus most DIPAs I have found that aging a bit is the way to go for my taste buds, particularly when it comes to any alcohol taste and it can cut down on this quite a bit.

    This days chores are complete, Friday I picked up this growler of Excursion at the brewery.
    The story of the hops is worth noting.

    From the brewery site
    " @hillfarmstead

    Nelson Lakes Farm is the new farm owned by our agricultural partners at @freestylehops in New Zealand. Situated on the edge of Nelson Lakes National Park, this is a region in which hops had not previously been grown. Although we have not yet had the opportunity to visit the new hop farm, Shaun and Phil were able to visit the region for a hike around the lakes in 2017.

    This harvest year yielded only a small amount of hops, and we are the sole brewery to receive those initial rounds of hops from the farm. With this first arrival of Nelson Sauvin, we brewed a new instance in our Excursions series: Nelson Lakes: Nelson Sauvin IPA with those hops, to highlight the unique, regional terroir within varieties.

    This will be available in growlers, by the glass in our taproom, and in a few locations in Vermont, NYC, and Massachusetts."

    Poured from a growler filled 48 hrs ago at the brewery.
    A - Late season Sunflower colored backdrop, opaque canvas hides the carbonation parade. The loose knit frothy cap is quick to recede.
    S - Crushed green grape skin, musk melon, some white pepper, my wife says peach flesh but not for me. Clearly fruit forward, balanced against a semi sweet malt base. Theres a beautiful tension with the malts holding there own, in classic HFB balance.
    T - More spicy than the nose offers, still lots of fruit character, with melon rime, peach(!), green grape, earthy malt expression acts to balance out the offering. The spicy part is quite something, runs against the potential sweet trap. Acting in a way that adds a great deal of depth for a single hop IPA
    M - Classic HFB texture, soft water, yet crisp hop showcase, center palate is noisy and delightful, finish is dry and quick
    O - A very expressive hop experience, as always balanced, and a treat to drink
