Or just kicked him in the dick and said, "We don't cellar IPAs, asshole."

Yeah, it's basically the same beer come back again after not having been brewed for a few years.

I agree 120 minute isn't an IPA but what would you call it?

    An IPwine?

    An IPtripel?

    An IPwee?

Yep, you're right, it does depend.

Once upon a time, being curious and not knowing what to expect, I bought a fresh case of the 90 min. and deliberately went through the case slowly until I finished the last one at about 9 mos. Contrary to popular opinion it did not become undrinkable at 2 mos of age and it was actually quite interesting to track the changes over time. When I got to the last bottle it was still a very enjoyable beer. The bitterness was pretty much gone but there were still lots of hop flavors and there was some nice sherry like flavor from the oxidation.

A great example of how cellaring really shouldn't be done with the aim of improving a beer, rather to see how a beer evolves.

I agree 99% of the time although I had a few dogfish burton batons from 2015 still, had one a couple of months ago, and thought it was excellent.

I think depends would be too strong of a word. The most I could see is to say in some rare cases some beers named IPA's by their brewer can be cellared and not be horrific.

A 10% blend of old ale and IPA that's aged in oak for a month? Not sure I'd call that a straight IPA in any sense of the word. It is, however, a tasty beverage, even with a decent amount of age on it.

I had 75 min on cask at the Rehobeth brew pub a few years back and really enjoyed it (cask IPAs usually don’t work for me). Will the bottles version be good? Not sure but I’ll buy some to sample.

Is 120min an IPA? IMO it’s mostly resembles an English Barleywine due to its sweetness (and fact Olde School is their American BW creation and significantly more bitter).

Isn't it, by definition, a Burton Ale?

It's a blend of an old ale and the 90 min. IPA. Both are brewed seperately then blended and aged in oak tanks for a while.

Right, but it was designed to mimic the solera style blending of beers like Ballantine Burton Ale, where fresh beer is added to replace what's been drawn off.

    Calagione, for one, maybe?

In the early '00s, Dogfish Head's label for 90 Minute Ale (which is an IPA ) used to say:
"This beer ages with the best of 'em"

(Note, too, that the city listed is "LEWES" not "MILTON". Don't recall the story on that - maybe just a Post Office thing?).

But Ballantine Burton Ale (post-Repeal, anyway) wasn't really a Burton ale - just long-aged, extra dry-hopped batches of Ballantine India Pale Ale, blended with fresh IPA (probably with some distilled hop oil added) at bottling.

I forgot that 75 minute was even a thing. Haven't had one in forever and I don't even recall what it tasted like.

I wish DFH taps were more common out here. 5-6 years ago they were everywhere. Now I don't even know where to find one. I'd much rather try a pint than buy a full 6-pack.
