    -> Poll #11<- determined that Vienna Malt will not advance to final fermentables combo poll.

    This poll will decide what combination of Munich Malt "Type II" (~9L) and/or Invert Sugar #2 (if any) will join Maris Otter, English Crystal Malt (~55L), and English Dark Crystal (~80L) in the grain bill.

    The choices are unique. Straight plurality wins this one. If your first choice is doing badly, consider jumping to your second choice if you find it more palatable than the current leader.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, malts already selected, as well as any possible yeast strain selection that might be knocking about within your grey matter.

    This poll will be open for 48 hours.

    For those looking ahead, the next poll will begin the process of selecting a yeast strain, before we return to the grain bill to determine the proportions for each fermentable.

    If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently.

    Voted Sugar because it used to be used in ESBs and I've never used anything but white and Belgian so far. I'd be okay with None too. There Shall Be No Munich.

    Here are a couple alternative grain bills to consider - one with invert sugar, one with just C55/C80


    Sugar

    8.125lb Maris (86.4%)
    7.5oz C55 (5%)
    5.5oz C80 (3.7%)
    7.5oz Invert 2 (5%)

    OG: 1.053
    FG: 1.012
    ABV 5.41%
    SRM: 10.86

    No Sugar
    8.625lb Maris (90.2%)
    7.5oz C55 (5%)
    7.5oz C80 (5%)

    OG: 1.053
    FG: 1.012
    ABV 5.41%
    SRM: 10.76

    As you can see very similar. The Sugar-free version has more Crystal but also a higher percentage of Maris.

    I think a little bit (~5%) of Invert #2 would be good in an ESB.

    Sugar please, I'd go for between 5% to 10% or so of it and to use it as priming if needed and maybe 5% of the crystal

    We could certainly go that way. My understanding was the Invert No2 has an SRM of 30-35 which translates to about 27L. In that scenario I'd rather have more C80 and less C55 because I think we should end up a bit darker than the 9.8 predicted.
