    -> Poll #12 <- determined that Invert Sugar #2 will join the fermentables.

    This poll will select a yeast strain, before we return to the grain bill to determine proportions. I have filled in equivalent strains where I was reasonably confident. If you believe there's a wrong equivalent or a missing equivalent, beermail me the evidence. If its' convincing, I'll ask the mods to amend the choices. To keep this one to a single poll, I did not list any non English/Irish strains. But you can write them in. I also excluded seasonal strains.

    Straight plurality wins this poll. If your first choice is losing badly, consider jumping to a similar choice that has more votes if you can't stand the choice that is leading.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, fermentables already selected, and potential proportions for those fermentables that me be knocking at your brain. We have yet to determine proportions of fermentables or recommended mash temperatures/times, but it may be time to start thinking about wort fermentability as you're selecting a yeast strain. Or perhaps not, since there are still some reasonably powerful control knobs left.

    @VikeMan How do you normally handle it for people who only have access to White Labs? I'm inclined to vote for a Wyeast only strain but don't want to leave people in the cold?

    Normally I only exclude ingredients if they are truly unavailable. Wyeast yeast is available to everyone in the continental USA, at least. Mail order may not be cheap (if you're only ordering yeast). But it's possible. Hell, if we end up with a Wyeast only strain, and anyone in the contiguous states wants to brew this recipe and really can't afford the shipping for yeast, they can beermail me and I'll send it to them.

    Voted 1318 but would be just as happy with 1469. 3rd place would be 1099.

    I love West Yorkshire. Would hate myself if I didn't vote for it. :wink:

    Though 1968 is probably the more traditional choice.

    I have used WY1469 before, so will go with that as I liked it.

    Going with West Yorkshire.

    For future consideration: Although it has a published AA of 67-71, my experience has been that it is much higher. I have had batches between 78% and 85%. I'm glad our choices so far are in line with a fairly high AA of 77%. We've agreed on sugar, a highly fermentable ingredient. To hit the target OG and ABV, I think we will need to consider how grist percentages and temperatures will help get us there.

    Of course, if the yeast drive this beer past the calculated FG, I'm probably still going to drink it :slight_smile:

    Fortunately, all of the top choices have a tendency to overshoot published AA. We'll bear that in mind because I don't it to end up too dry

    As a side note - yeast is as least as important as secondary grains. I'd like to see a runoff of over 30%s on this.

    I voted Wyeast 1968 / WLP002. For those that don't know many believe it to be the Fullers strain.

    If you want a dry strain that's equivalent to something already listed, vote for that, and beermail me the information per the instructions if you think it should be listed as an equivalent. If you want a dry yeast strain that has no equivalent, write it in.

    I was thinking that I would probably do a split batch - the yeast we vote in and the Lallemand ESB strain, since I haven't tried that yet.

    Personally, I really like Ringwood. But it's pretty clear that yeast will never win any popularity contests. Voting for West Yorkshire, as its description is intriguing. Cheers!

    I haven't tried it yet either, but from what I understand, it is nearly identical to Windsor ale yeast. Expect only about 62% attenuation with either one. S-04 is said to be the same as WLP007. However I've not done a side-by-side and I know there are differences between all the different manufacturers. Nothing is truly equivalent. And that goes for Wyeast vs. White Labs vs. everybody.

    I like 007 and am not so fond of S-04. I have heard that it is comparable to either WLP 1098 (~007) or 1099 (also a Whitbread strain).

    It would be disappointing if Windsor and ESB were close. I have liked Windsor but hoped for something different

    A suggestion. And it's only a suggestion, not a request... The way the voting seem to be going, those who voted for something other than Wyeast 1469 or Wyeast 1968 / WLP002 may want to consider jumping to their preference between those two if they want to influence the outcome. I'm not planning a runoff unless there's a tie.

    The percentage thresholds from some of the other polls are designed to whittle down the choices when there are possibly multiple ingredients getting in, so that people can see them in increasingly better contexts. Since there will only be one yeast strain, and the choices are unique, it's a plurality poll.
