What should the Bittering Hop Philosophy be?

    -> Poll #22 <- determined that neither Fuggle nor Jester will be used as flavor/aroma hops.

    This poll will determine if the Bittering hops (arbitrarily defined for this recipe as hops added with at least 45 minutes remaining in the boil), if any, should be one or more of the varieties already selected for flavor/aroma, or if they should be a high Alpha Acid, Low Cohumulone variety, or if neither restriction should apply. These are non-quantitative choices, so straight plurality will win.

    This poll will be open for 48 hours (or less if there's a massacre in progress).

    If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently. Lobbying for votes and intelligent discussion of each choice's relative merits is encouraged.

    Target ABV: 5.4%
    OG: 1.053
    FG: 1.012 (77.4% Apparent Attenuation)

    Grain Bill:
    ---Maris Otter (89%)
    ---English Crystal Malt (~55L) (5%)
    ---English Dark Crystal (~80L) (2%)
    ---Invert Sugar #2 (4%)

    Flavor/Aroma Hops:
    ---EKG, Target, Northdown


    Mash Temperature (recommended): 154F
    Mash Length (recommended): 60 minutes
    Yeast Strain: Wyeast 1469

    Use one of the ones we already voted in for me. probably Target, but I have never used Northdown so maybe that if others convince me.

    I had my hopes up to use Challenger as the bittering hop and am the lone wolf on the high alpha/lo-cohumulone choice at this point. That said, should things keep trending toward using one of the previously selected varieties I will be lobbying for Northdown since Challenger is one of its descendants with similar characteristics.

    Same opinion as last poll -- 3 hops is enough.

    We have a good variety already anyway so we don't need more.

    Mostly for simplicity, I vote for using what we have. Target and Northdown are dual purpose. As long as we have a healthy bittering charge, I'll be happy. Late hop IBUs just don't register on my palate.

    I think ESBs should be heavily tilted towards bittering vs. late hopping. I also think we should not dry hop.

    That being said, I am hoping we are in the lower (30-40ibu) range.
