    -> Poll #24 <- determined the timing of the hop additions. This poll will determine the IBU target. Note: The bittering model will be Tinseth, and the flameout/hopstand/whirlpool addition will count in the IBU calculation. (I'll use BrewCipher's modified Tinseth model.) But because everyone has different capabilities/systems for performing hop stands and whirlpools, we'll model that addition as if it will be at 170F, for 15 minutes, which should be a decent middle of the road compromise for calculation purposes. (This is for calculation purposes only...the recipe won't actually specify the temp or length.) So keep this in mind while voting.

    I recommend you think about the IBU levels in terms of the bitterness of outstanding ESBs you may have tasted. If you haven't had any, I recommend paying attention to the discussion. If you want less than 30 IBUs or more than 48, write it in.

    When this poll is done, I will look at the data a few different ways to determine the central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff. It all depends on the data.

Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently. Lobbying for votes and intelligent discussion of each choice's relative merits is encouraged.

    Target ABV: 5.4%
    OG: 1.053
    FG: 1.012 (77.4% Apparent Attenuation)
    IBUs: TBD (this poll)

    Grain Bill:
    ---Maris Otter (89%)
    ---English Crystal Malt (~55L) (5%)
    ---English Dark Crystal (~80L) (2%)
    ---Invert Sugar #2 (4%)

    Hops:
    60 Minutes: (EKG, Target, and/or Northdown, Qtys TBD)

    Mash Temperature (recommended): 154F

    This is not an IPA. The key to an ESB is balance. We went lighter on the crystal. We have to go lighter on the hops.

    Voted 34 but would be happy 30-37.

    I had 35 in my head before I saw the choices and went with 34. Based on what we've voted on already, somewhere close to this seems appropriate for good representation of the style.

    Assuming we get 35 or so from bittering

    I went with 40. I am hoping to get at least 3/4 of this out of a bittering addition. Late addition and whirlpool hops are great, but the bitterness from these additions can't compete for the firmness of 60 minute additions, at least for beers I've made and tasted. I picked 40 because it seemed like the highest level that might be able to draw a critical mass from nearby levels -- I'm looking at you, folks that voted 38 and 42. People like round numbers :wink:

    I want to end up around 40, so I voted for 48 to cancel out some of the low votes :slight_smile:

    Just a word about voting at the extreme ends of the spectrum... depending on the distribution of the rest of the votes, votes on the ends could end up being discarded as outliers, courtesy of John Tukey.

    Can anyone here tell the difference between 36 IBUs and 38 IBUs?

    If not, maybe gradations of 4 would be helpful. For example 34, 38, and 42 for the next ESB IBU poll (if needed).

    Of course I can't. And everything we decide on will have a margin of error.

    I think the fine gradations are so that @VikeMan can work his statistical magic.

    Looks like it might be high 30s

    tbf I'm fine with the sweeter ones or the more assertively bitter ones.

    When are we voting on dry lycheeing this then? Or are we going with rhubarb as it is in season?

    I don't have @VikeMan 's skills so I used an online calculator to crunch the numbers thus far. I think it'll be 40. A bit too firmly bitter(IMHO) but not way out of bounds.

    And anyway - by the time we go to make this it'll be strawberry season - strawberry rhubarb bitter anyone?

    Maybe a riff on the black and tan when serving?

    ESB and strawberry smoothy. Will be widely available in Brooklyn next week no doubt, with an artisan, hollowed out rosemary bark straw to enjoy.

    101 BA score guys, chase the dream. You heard it here first and probably last, it's that exclusive.
