-> Poll #5 <- determined that the Base Malt will be Maris Otter.

This poll (and possibly the next) will determine what type(s) of Crystal Malt(s) are in.

PLEASE READ THIS BEFORE VOTING! You need to understand it for the results to be valid. There are Two Concurrent Mini-Polls. Because there are only 10 slots available per poll, this poll is split into two concurrent mini-polls. You should vote in both polls, and you can select more than one variety per poll. At the end, I will combine the results to determine the top varieties for further (potential) whittling. Vote in both of the concurrent polls...if you don't want any of the malts in a particular mini-poll, you should vote 'None of These" in that mini-poll. If you want a C-Malt not listed, write it in.

You can select more than one choice. The #1 overall choice (from both segments combined) will automatically be in. Beyond that, any other choices that get votes from at least 30% of respondents will advance to another poll to determine exact combinations that are in. Want something that's not listed? Write it in. If your first choice is losing badly, consider jumping to a similar choice that has more votes.

I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, base malt already selected, and fermentables still possible, as well as any possible yeast strain selection that might be kicking around in your head.

This poll will be open for 48 hours.

If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently.

The Averagely Perfect ESB Recipe so far...

    Target ABV: 5.4%
    OG: 1.053
    FG: 1.012 (77.4% Apparent Attenuation)
    Grain Bill:
    ---Maris Otter
---Carapils and/or Other Crystal Malt(s) IN (exact choice(s) TBD, this poll)
---Sugar, Sugar Products, and/or Honey possibly in (TBD, future poll)
---Munich and/or Vienna possibly in (TBD, future poll)

In the previous poll I mentioned that there likely are differences in Maris otter offerings among the various maltsters and I think that goes double for the crystal malt. I suspect that there will be some variation among the different beers brewed that could be attributed to these maltster differences. Still, I think it is the right move to not try to vote on the maltster as I suspect most of us don't know this turf too well. FWIW, @VikeMan, there is at least one darker English crystal out there (from Simpson's, I think, at 150-60 L), but I wouldn't necessarily want it for this beer. Also, is golden naked oats ruled out? I wouldn't vote for them just because I have used them a lot in the last 2-3 years, but I do enjoy them.

Absolutely. For instance Bairds "medium crystal" is listed 50-60L

I went for three: 55, 80, 120. I'm thinking the 55 will lend the caramel:toffee, and use one/both of the others to ensure the ("bitter") presence of the malt in a long finish.

I went 55 for sweetness/toffee and 80 for color and a bit of roastiness. Oh yeah, and those are the only ones my LHBS has.

I voted for everything except the caramalt because I would like to use a couple of these and I would like to see a little bit of discussion about possible combinations. And to give Vikeman more data points to play with

Voted 45 & 80. Will get roughly the same color contribution as straight 55, but a blend of crystals tends to give a subtle complexity that a single doesn't have.

I looked around - who makes a British Medium Crystal malt with 45L color?

Looks like there will be a runoff between English Crystal Malt (~55L) and English Dark Crystal (~80L). Although they each got votes from more than 50% of respondents, the was not enough overlap in voters to put them both in automatically (i.e. there were less than 50% voting for both of them together, in context). So we need to determine which one is #1 (and thus IN).

The "loser" will still be in the running, as will English Medium Crystal (~45L), but as part of a combination poll to determine one, both, or none.
