    Averagely Perfect Saison - Leaf Hop Version
    Saison
    All Grain (with Partial Mash option)
    Batch Size: 5 Gallons into fermenter (5.26 gallons including trub prior to xfer to fermenter)
    OG: 1.045
    FG: 1.002
    ABV: 5.7%
    24 IBUs (per Tinseth Calc)

    Mash Efficiency: 70%

    Grain Bill:
    Belgian Pilsner Malt - 6.27 lbs
    Flaked Wheat – 1.57 lbs
    Vienna Malt – 1.38 lbs

    Hop Schedule:
    60 Minutes

    --Saaz, 4% AA, 0.56 oz
    --Hallertau, 4% AA, 0.56 oz
    10 Minutes
    --Saaz, 4% AA, 0.75 oz
    --Hallertau, 4% AA, 0.75 oz
    Flameout/Whirlpool/Hopstand
    --Saaz, 0.75 oz
    --Hallertau, 0.75 oz

    Yeast: WLP565/Wyeast 3724 and WLP650, co-pitched [no starter for the Brett]

    Process:
    - Moderately Hard Water, balanced toward Crisp Bitterness. (example: 36 ppm Ca, 0 ppm Mg, 0 ppm Na, 18 ppm Cl, 61 ppm SO4)
    - Recommended Mash: Single Infusion @ 150F, 60 Minutes, no Mashout
    - Pitch Yeast at 68F, ramping up to 80F over 4-7 days
    - 90 Minute Boil
    - This version of the recipe assumes whole leaf hops, with a wort absorption of 0.0625 gallons of wort per ounce of hops. YMMV. Adjust as necessary.
    - I used my own boil off rate (in conjunction with hop wort absorption) to determine a starting wort volume, which impacts hop utilization. YMMV. Adjust as necessary. Use your software.
    - Anything you change that relates to absorption will change the total fermentables you need to get out of your mash. So you may need to adjust the grain bill up/down.
    - If your hops have different Alpha Acid percentages, adjust as necessary.
    - This recipe assumes 70% Mash Efficiency, a little higher than BYO recipes (for example) assume, but probably closer to the average efficiency on this forum based on what I've seen over the years. YMMV. Adjust as necessary.

    Other Notes: Partial Mash Option
    Replace the Belgian Pilsner malt with 3.78 bs of Pilsen Light DME. Mini-Mash the Flaked Wheat and Vienna Malt together. Add the DME at beginning of the boil.

    I should probably add... this is not my recipe, nor has anyone brewed it to the point of consumption yet. It's the result of the latest crowd sourced "Averagely Perfect" poll project.
