    The previous poll (#25) determined that the recommended mash length will be 60 minutes.

    This poll (#26) will determine the boil length. If you want a boil length not listed, write it in. (After boil length is determined, we'll move on to hops.)

    When this poll is done, I will look at the data a few different ways to determine the central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff. It all depends on the data. Ultimately, the selected time will be rounded to the nearest 5 minutes.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the recipe so far. Design the best beer you can, given what's already been decided. Resist the urge to try to steer the recipe back toward a beer that might be impossible. Also, I strongly suspect many folks have not made a beer quite like this recipe (so far) before, so please discuss the options at length.

    Batch Size: 5 Gallons
    ABV: 5.7%
    OG: 1.045
    FG: 1.002
    Mash Recommendation: Single Infusion @ 150F, 60 Minutes, no Mashout
    Assumed Mash Efficiency: 70%

    Grain Bill:
    Belgian Pilsner Malt (68%)
    Flaked Wheat (17%)
    Vienna malt (15%)


    Yeasts:
    WLP565/Wyeast 3724 at beginning of fermentation
    WLP644, 0.5 Liter Starter Recommended, added to primary when beer/wort reaches gravity of 1.033

    Not really worried about DMS, but I tend to do 90 min boils when I use pils, sometimes I forget and do 60 min, never noticed a problem.

    I've heard it from a trusted source that modern day Pilsner malts have somewhat lower SMM values then Pilsner malts of the past. He stated that a 90 minute boil is not a requirement and that a 75 minute boil is more than sufficient. After learning this I have shortened my boils for Pilsner malt worts to 75 minutes and I have never perceived any DMS in those beers.

    Maybe as @wspscott has posted, only 60 minutes is really needed.

    A 75 minute boil is my default unless I want to increase gravity or melanoidins with an extended boil. I haven't had DMS issues with Castle or Briess pilsner using a 75 minute boil.

    Yup, Pils, Flaked Corn, and 6 Row. 45 minute boil, 45 minute hop stand, and 45 minute chill, still no DMS. Not that I would recommend ever doing it.

    I use pils for almost everything and do 60 min boils. So 60 it is.

    60 for me. Never had any DMS issues to my knowledge.
