    Because we can't browse the humongous catalog of beers on this site according to specific characteristics or ingredients (because that would be crazily difficult to do), I decided to turn to the forums to see what notable brett/wild (D)IPAs are out there. I've had a couple and loved them. It's also exactly the kind of thing I want to brew. I know that brettanomyces can be divisive, but it seems that it's more popular than ever and personally I fall into the crowd that thinks it's the bees' knees.

    Also, I'm sure some other people have seen this but a few days ago To Øl posted this link about their research on mixing brett and hops, which I found fascinating. I've heard before that brett can do magical things to hops under the right conditions, but it was great to read that little blog post because it actually puts a snippet of the molecular alchemy behind this subject into a short, concise package. Also, it says to me that there really is something special behind the mixture of brett and hops, and more people understand how to pull it off than just the wizards Chad Yakobson (Crooked Stave) and Gabe Fletcher (Anchorage Brewing Co.).

    So, what do you guys think? I've had a couple, including Bitter Monk, Wheat is the New Hops (which is criminally underrated, by the way), and Hop Savant, all of which I enjoyed immensely. I know Prairie makes a few hoppy brett beers, and I recently picked up a bottle of To Øl's Yeastus Christus, which I'm looking forward to. What about you guys? Who's had them? What's out there? Which ones are the best? What makes them special (to you)?

    Finally, anybody brewed brett IPAs before? Any secrets, tricks, recommendations, or other advice? Thanks!

    My favorite Brett IPA is Evil Twin Femme Fatale Blanc: a beer made in Denmark that is an IPA brewed with 100% Brett and Nelson Sauvin hops. That beer was sublime! It was somewhat bold but what I appreciated was the pleasant blend of the Brett produced flavors (phenols, esters, etc.) and the flavors from the Nelson Sauvin hops. I am not typically a fan of Nelson Sauvin hops but they worked real well in this beer!

    I also like Victory Wild Devil; there is an active thread in the Beer Forum discussing this beer.

    In terms of homebrewing, it sounds like which strain you select and how you utilize the Brett strains (e.g., 100% Brett, Brett combined with Brewer’s Yeast, etc.) will significantly impact how the beer turns out. I have read posts from other homebrewers where their 100% Brett beers had little to no funk. Hopefully you will obtain more input here.

    Red swingline is my go to hoppy wild. Its sour mashed, finished with brett in barrels, and dryhopped to high hell. Amazing beer.
    As far as homebrewing them goes, I do alot of hoppy saisons, and brett brux trois is always there to finish things up for me. I find tropical, melon, and vineous hops all work well with the brett. Nelson and citra have been my favorites, but I mean to try mandarina bavaria next. The brett gets pitched with saison dupont strain and they work wonders together, but dont take temps too high, the brett produces some crazy phenols at 90 degrees. Zymurgy had a nice write up on brett ipas a couple months ago. Totally worth the read.

    Wouldn't have thought the combination would work, but I was able to try the Brett IPA from Wicked Weed/New Belgium and it worked real well. Hoppy, slightly tart and, with a bit of funk. Left me wanting more. Who knew?

    If you're ever in North Carolina, personally I think it goes without saying that Asheville and the surrounding area is a must-do. If not for outdoor sports and mountain air, then for the beer. And, Wicked Weed is easily my favorite beer destination in AVL. Wicked Weed does a great job with brett, but also hops, as evidenced by a brew they made called Hop Diva. Evidently, I loved the ever-loving shit out of that beer.

    I'll have to check that out, man. And your description of the homebrews you make sounds fantastic.
    Jack, I've had Femme Fatale when it was a year old or so (I was unaware of its age at the time) and it was bad—the brett had produced some rather unpleasant phenols, the hops were basically dead, and it just didn't mesh. I've heard Femme Fatale Blanc was outstanding, though, and Femme Fatale Yuzu was one of the best beers I had in 2013. I absolutely loved that one, and wish I had had the opportunity to write some notes and post a review!

    Evil Twin Femme Fatale Brett is one of the most sublime beers ever created IMO.
    Then there's Prairie 'Merica. I could smell that beer all day without even taking a sip and be in heaven.
    Wicked Weed's Taketake does an amazing job of showcasing New Zealand hop varietals in a Brett context.
    Victory Wild Devil, while not really having an in-your-face hop profile, is a great Brett beer that I'm so glad has returned.

    I'm of the opinion that the combination of Brett and hops is a glorious thing. As if I'm not already hooked enough on hoppy beers, adding this perfectly complementary yeast strain to the equation is like sprinkles on the icing of the cake.

    Wicked Weed is coming out with another one next week. Called Lusus Naturae. Gonna definitely be picking that one up as WW does no wrong

    Have experimented with IPA and Brett in barrels. Brux didnt really work in my opinion,the mix of hops and wet horseblanket/barnyard were not a good mix. Using a classenii brett worked much better,good flavors of granny smith,verbena,lemongrass mixing with the hops. Dry hopping added a nice aroma to the brett and wood. I would recommend doing a 100% brett fermentation. Remember this shit ferments out almost all of the sugar so careful using to much priming sugar.

    From my experiences, I can only agree.
    Never gotten to try 'Merica, but from everything I've heard this is exactly the kind of beer I'm looking for. Just wish I could get my hands on a bottle, and preferably a fresh one! As for Taketake, it sounds like this is where some of the best brewers are headed, and that's got me excited.

    Drink it fresh to enjoy the hops? Age it to enjoy the brett? it's a style that I don't think will ever "take off'. But my opinion stinks too.

    Bitter Monk and Galaxy White IPA from Anchorage Brewing are both Brett IPA's that I absolutely love. Wild Devil, which has just been re-released by Victory, is another great example of a Brett IPA. I opened a bottle of the 2009 Wild Devil in the spring of 2013 after cellaring it. It had lost the hops but the Brett had done some amazing things and it was a whole different experience. I just put a bottle of this years into the cellar to see what happens. Another that really seemed to develop well was Green Flashes Rayon Vert. Unfortunately it is no longer being produced. I still have a 4 pack of it in the cellar, personally sad to see it go.
    Also forgot to add Brettliquor IPA by Surly Brewing. Fermented with Brett and dry hopped with Styrian Golding Hops. Only had it once from a trade but would definitely drink it again.

    Love hoppy wild ales with my favorites being New Belgium's Le Terroir, Crooked Staves Hop Savant, Trinitys Red Swingline Funkwerks Brett Trois. Just had Prairie's Funky Gold Mosaic last night, which is marketed as a dry hopped wild, but I didn't notice a ton of hops in it.

    I do notice I generally enjoy these beers best fresh, even for wild ales. Once the hops go, the base beer is kinda boring to me. Even with the brett.

    Yes & I favor Brett Pale ales over the higher abv more intense 'IPA'. 4.5-5% is where it's at.

    Love dat fungus!

    Enjoyed all the Femme Fatale I've had (though I never had the black ale version) - my favorite is the Yuzu Pale - lime/grapefruit plus funk! Also really loved Mikkeller's Invasion Farmhouse (brewed at Anchorage); speaking of which... Bitter Monk is amazing (I've had Anchorage's Galaxy White and Tide and Its Takers (tho that's a tripel) - both awesome brett beers); and while Crooked Stave does lots of styles, it seems they really love their brett and so do I.
