    Bierschnaps originated in Bavaria, where brewers with on-site stills often create a house spirit from leftover beer. Recently, more breweries outside of Germany are experimenting with the beery spirit.

    In NYC, Arcane Distilling has been producing a series of "beer whiskies", vacuum distilling from a variety of local beers that are contributed by the brewers. Strong Rope has supplied both a barleywine and a smoked amber for the project. The latter whiskey was particularly flavorful and reminiscent of the original beer. I can't wait to try the newest, a distillation of an IPA.

    The current one works well as a snapshot. But the basic idea could also be the basis for an interesting series of short articles with a bit more of the history and additional examples since some of this has been going on in other widely scattered cases for more than a couple of years and it may be a growing trend we'll see more.
