Bourbon (or bourbon flavor from barrels). Love the stuff. But in beer? It's not that it's unpleasant, but it doesn't improve either in my opinion. Don't get me wrong, a beer like KBS is great. But I'd much rather have just a regular stout that highlights the malt and hops and leaves the barrel out. As a person that loves bourbon, this was a surprise to me.

Considering it would kill me via anaphylaxis, I'd say any kind of nut is a disappointing ingredient in a beer.

Spruce tips. No, I don't eat them, but I like the smell and the look of the trees. Pennsylvania Tuxedo gave me the weird impression that I was drinking a tree.

Second that. I enjoy blueberries themselves, but generally hate anything, beer included, that's blueberry flavored.

I've seen peanut butter mentioned a few times. I've never had a peanut butter beer, don't intend to, and strongly suspect my life is none the poorer as a result. Some things just don't need to happen.

But I digress. To answer the OP's question...Rum. I like it, but don't ever need it in my beer going forward.

Lavender is really easy to overuse. Stone Saison is gross because of this fact.

Came here to say the same thing. I enjoy oysters but haven't been find of any of the oyster stouts that I've tried. I always think the next one is going to be decent but they are never briny enough for what I'm expecting. I know that sounds gross but most have just faint flavor and taste like a regular stout to me. Others just taste kind of weird but not like oysters.

Peaches & pineapple, especially pineapple. Pretty much every beer I've tried that has had pineapple in it, has turned into a drain pour.

Pumpkin. I love Pumpkin pie and almost everything pumpkin - but have have struggled to find a good pumpkin beer. I started on my quest just this year because I am new to craft, and have managed to try a dozen or so pumpkin beers available here. Unfortunately, most pumpkin beers are shooting for "notes" of flavor, which sometimes can't be tasted at all. Others you can taste, but they come off as more of a squash beer. From reviews, there are probably several I'd like (Schlafly, Dogfish Head, Cigar City, Elysian) but unavailable here. Done for the season, so my quest will resume next fall.

I jumped thru hoops for my first Cherry Rye, actually I came up with two. I drank the first, mind wasn't exactly blown, the cherry hit was a bit tart, kinda sour, and to be honest I kept thinking it tasted exactly like an infected Duck Rabbitt Stout to a degree. The degree was Bcbs base is far superior to anything DR. I traded the second bottle, but I had to try it.

Cardamon is fine in food but not in beer.
And spruce tips are fine on trees but not in beer.

You just made me laugh out loud.

The idea of peanut butter in beer makes me gag, too.
