Has anyone ever tried to age BORIS or DORIS? I think they are too bitter fresh, but I'm considering aging them to see if that bitterness drops off. I just don't want to blow $30 on 2 bombers that may end up being awful aged.
BORIS around 1.5-2yrs is killer, DORIS I've found to be at its peak fresh due to more hops - but I've never had it past a yr (and it was in its awkward carboard-y stage)
I may try the BORIS then. I looked today but couldn't find a bottle date. Do you know if they date the bottles?

After a year, the bitterness drops off, but so does the chcolatey components. I'd say go the year, but don't take it much longer.
Breaking out a three year old Boris and am enjoying it thoroughly. Tons of dark chocolate in the aftertaste.
I went to the brewery and asked them this specific question about BORIS this summer before buying some myself. They said that it will age well for years. They have bottles going back 3 or 4 years on their menu.
I have 2 bottles of BA Boris in my cellar aging, they are probably 6 months old now. I'll crack one soon and leave the other for another 6 months. I can report back when I drink the one.
