Who's brewing this weekend and beyond? I'm finally bottling my forever saison tomorrow after work. Thirteen weeks in the fermenter. :grimacing:

I'm returning from a biz trip to beer Mecca -- Boulder CO, and have a mild waiting for me in a fermenter when I get back. It was a pretty full bucket and I realized I didn't have any tubing cut and sanitized for a blow off. So I put an airlock on with the intention of adding the blowoff before I left town. I expect to return to a mess, but whatever is not on the floor (or ceiling) may be ready to keg.

Gotta get something hoppy going. I haven't brewed in forever. Maybe an ESB and APA from the same mash?

My sister bought me a California common extract kit. I did a great job looking excited. It's Munton's pale LME and a lb of British C60. Gonna throw some S04 and Notty at it and call it an English pale ale. It hadn't been refrigerated for awhile, so I'm not even bothering with the lager yeast it came with.

No brewing, but earlier tonight I stepped up a WLP 644 starter for next weekend, and a smaller starter from a can of heady topper for later in august. And later this weekend I'll start cold crashing an IPA with gelatin for the first time; I want to see how clear I can get it.

How much tonic does one add for a batch of saison?

The tonic portion comes from the shitty water around here.

Just kidding, gonna give it a bit more bitterness than I normally would a saison to mimic the tonic, juniper and coriander for the gin, lime zest and kaffir lime leaves for the lime.

Came up with the idea a month ago, had this beer:

and knew I had to try it.

Bottled first batch last weekend, brewing a new batch this morning. Doing a summery wheat beer with Oats, Bitter Orange, and Peaches (in secondary). Should be fun!

Brewing an Ordinary Bitter. First brew at the new house... Haven't brewed outside in over 4 years, definitely perfect weather for brewing.

Amateur hour yesterday as I didn't take into account the water in the LME and overshot volume. Added some turbinado sugar to compensate and called it a day.

My extract version of that recipe is a week into fermentation and tasting mighty fine. The anticipation of the finished product is killing me.

Waiting for the gravity on the brett berliner to stabilize before bottling/ racking a portion over apricots. Also anxiously waiting on a Galaxy DIPA that is conditioning in the keg. I have the ingredients for another berliner that I'm planning on fermenting clean, with a portion bretted at bottling. Should make for a nice side by side of early brett vs. brett at bottling with a sour beer and give me an opportunity for another split portion over wild blueberries.
