I believe Dark horse 6 pairs of legs is aged in maple barrels. Also ManBearPig is aged in Bourbon that were used to shed maple syrup before the beer was aged in them.
Founders CBS and Project Pam come to mind... but the barrels are also used for whiskey. I'm not sure you can go straight into a maple barrel, it seems like the fermentation would be out of control.
I was under the impression that Thirsty Dog Maple Porter was based on the description. They even named the source - http://bissellmaplefarm.com/ They could be former syrup barrels that held bourbon like CBS though.

If you lick a properly dried/kilned maple stave does it taste sweet? I don't think it does as the sugar bearing sap has been removed. Even if it did the sap wouldn't taste like syrup any more than sugar taste like caramel. If I wanted to add maple flavoring to beer I believe a better choice would be an oak barrel that previously contained maple syrup. Of course maple wood does carry a certain marketing image.

Plus if you get 6 pair of legs from dark horse you can also buy the maple syrup they make in the bourbon barrels. Let's just say it is a very sweet at bourbony syrup. I think I have a 6 legs left. Sadly one was infected.
