If you can find the unfiltered unpasteurized PU, if has been lagered in pitch lined take. The beer does not touch wood in this case. Michael Jacksons beer hunter Czeck episode shows the maintainance of those tanks.

Edit had some not too long ago. No oak, no sourness, no Brett - just a hell of a good beer.

There is a local brewery in Montgomery Tx that has just started canning. They brought their wit, Dom'E'Stique, that had been aged in New French Oak to a tap takeover at my local Whole Foods. It was nice being able to drink them both oaked and un oaked side by side. It took the wit and gave it a more chardonnay mouth feel with a big oak smell. It took an ok wit and elevated it to something special

Let me know when you are in town, Ill be glad to shared some of my stuff....For barrel age stouts/dark beers you have to appreciate the barrel....wether is bourbon, whiskey, wine, brandy, rum or even tequila.....I love bourbon and whiskey(wish I could afford them)....one of all time favorites....BB4D.....Kuhnhenn barrel age 4d....old ale(so not dark)age in bourbon, a little uncarbonated but PHENOMENAL regardless...gets whole lot better with a litte age...wish they made it more often, but we have to wait for it, like the Mayans waited for their " shit "....released every freaking Winter Solstice
