I think I'll do an all-malt Belgian pale ale this weekend.

@corbmoster it looks like you've found a way to brew a black and tan all in one fermenter!

@stealth that head looks creamy! Any chance you could divulge what hops you used?

Finally getting ready to do the juicy bits clone and figured, what the hell, let's do a pils the same day. Somehow I scorched my damn starter, started that over. I am trying a new yeast company, inland island. The east coast ipa is reportedly L3, and for the pils I grabbed monk lager. So I guess we'll see how it goes. It is nice, the yeast is $1 more than a smack pack, but it has twice the cell count.

Brewing up a Saison this weekend. Pilz, Dark Wheat, Flaked Oats, Vienna, Acid Malt, Aromatic, Hallertaur, Tett, Citra, Belgian Saison, French Saison, Brett brux var Orval. Aiming for 4.7% ABV, 31 IBUs, 4 SRM, 1.003 FG. Going to keg up half and bottle the other half.

Need to clean the garage to make room and clean up my mess from last brewday (January 1st) to make this happen.

Re-brewed my smoked session beer with a few tweaks on the grain bill and also did it as a yeast experiment with one carboy using cali lager, and the other using 3711 farmhouse. I did it with all late hop additions of sorachi, galaxy, mosaic and el dorado, and will be doing dry hopping on primary and late fermentation.
It estimated 1048 and turned in a 1045 og, and I liquored the cali lager version back to about a 1039.
    57% 6 row
    18.6% honey malt
    3.4% special b
    5.3% extra special
    11% smoked malt
    3.4% oats
    1.7% acidulated

Things have been quiet this month for me as the pipeline has been full. Just kegged my Marzen last night, so that will be ready in 5-6 weeks or so. Will brew a RIS next weekend to age away a few months... Got to get working on finalizing that recipe here soon.

In the process of starting the Belgian Pale Ale, I'm taking advantage of my temperature controlled mash water to do a forced diacetyl test on the American Pale Ale I brewed two weeks back. The Mangrove Jack Liberty strain (and other liberty strains) have given me some D problems in the past. Anyhow, thought this was a clever use of resources.

Starting with a new session pale with lots of Equinox and Amarillo, and 4.3 abv. Currently a bad ass Burton ale, then on to the smoky blue borris

Just finished up with my IPA. Finished a couple points low, but that seems normal for my set up. Smelt like a citrus-berry tea while cooling it off with the chiller. Used 2 oz of Galena and 3 of Cascade in it and will dry hope with 1oz of each for 3 days in primary. Should be interesting to see how it turns out for my first go at an IPA.

Been a while since I've been on BA - just got a new job, and been traveling these past few weeks.

Kegged a key lime gose a few days ago.

Also, chopped up/puréed 2 whole pineapples and transferred a brett/sage Berliner weisse onto em. This year was supposed to be a 'getting back to basics' in brewing, but I'm getting weird again

Just made 13 gallons of pale 1.045 wort:

    75% floor malted pilsner
    15% rye malt
    10% munich

5G will be dryhopped and fermented with WY1968 for a hoppy session beer at 4.5%

5G will receive 2# of 5 SRM candi sugar and be fermented with WY3789 Trappist Brett Blend ~5.5%

3G had an additional 2G of wort added from a separate mash of 5# of beechwood smoked malt and will be fermented with WY2042 Danish lager ~5.7%

Long brewday with two mashes and two boils, but I'm really looking forward to drinking these three different beers!

Did you guys know hop pellets will stop a chugger pump in it's tracks? Who'd have thought?

Bottled a super pale hopper, defiantly gonna be a Gormy Topper with plenty of Joplin flakes swirling in the bottles. Then, brewed. A west coast IPA, sort of, with big bittering , lots of Columbus and nugget, followed. By cascade Equinox chinook and simco at FO
