    Brewing the Dubbel today with my Dad. Overshot preboil volume by 1/4 gallon, not sure what happened. Might extend the boil or just have lower O.G. Oh well, we're having fun.

    Brewed a Northern English Brown Ale earlier this week.

    Maris Otter, C60, C90, pale chocolate and brown malt. EKG and UK Fuggle. Wyeast 1028.

    Targeting 4.6% ABV, 25 IBU. If all goes well it'll be a nice easy drinker for the fall.

    Well the verdict is in. I tasted it recently, and the pound of Vienna is much preferred over the pound of light Munich. It came out much better than I expected and is one of the best lagers I've made in a long time.

    Not feeling wlp coastal haze .Only been in the keg 2 days, and taste solid - but I liked this grain/water profile much better with imperial juice (1318)

    Kegged barley wine and prepped keg for receiving dryhopped cream ale. Also gave the Kaiser a liter of starter wort and cleaned out the bw fermenter in anticipation of tomorrow’s brew day (alt with RedX mentioned elsewhere)

    Single Decoction Pils today

    Barke Pils
    10% Cologne Malt
    2% Acidulated
    Lots and lots of Hersbrucker
    German Lager X

    15@ 130
    Step to 145
    45 @ 145
    Pull /Boil Decoction to step to 162
    20 @ 162
    Step to 168

    Gonna try a much higher So4 water profile. Haven’t been really liking the mostly Cl ones I’ve done.

    @mattflippin and I are brewing a mash-up IPA. Galaxy/Mosaic with Simcoe/Warrior. Late hop additions but West coast water profile and 1056 yeast. Should be interesting.

    Work and family commitments have gotten in the way, but finally brewing up this year's Christmas ale tomorrow. Hopefully, it'll be ready in time.

    I made a pre chiller today. Hoping that will help me get down to pitching temps without having to use the fermentation chamber and wait hours before pitching. Its getting chilly here so hopefully its not necessary for too much longer but it will come in handy in the meantime and when it gets warm again.

    Step mashing Brown ale version 3. Looks like chocolate milk but it came out clear later.

    I was underwhelmed by a pre-chiller, so I switched to an ice water pump. Cheaper and way more effective.

    Yesterday, brewed this here imperial stout. My computer just up and shut off a day before brewing (and now won't reboot) so despite having the majority of the recipe on hand, I manage to have a bit of a day. Missed my OG by quite a bit -- 1.094 vs. predicted 1.110 -- but the OG sample smelled pretty good so there's hope yet. Also bittered with Nugget instead of Magnum as I needed more AAs for the bittering charge. Only my second high alcohol batch, so some more practice required to dial in efficiencies for that big of a batch.

    Pitched yeast from a coffee stout I bottled yesterday as well, and that beer might be my best beer yet, based on the sample at bottling. Hopefully that recipe isn't lost to oblivion and the Apple wizards can work some magic on my computer tonight.

    Kegged Christmas Beer, brewed Irish Red, cleaned 3 kegs, tapped Oktoberfest and Imperial Stout. Busy, busy, busy.

    I brewed an NEIPA and a Pale ale for my wedding. Kegged on 10/10.

    NEIPA came out great

    Pale ale, not so much. Good aroma and upfront taste but the after taste seems astringent and almost dry sort of. Pretty hard to describe but im leaving that in the keg to see if that will mellow out or not.

    So... i will be brewing a back up pale ale on 10/16 at night and try to turn that beer in 9 days... ive read its possible.. ill be using us-05 which is all i have on had right now. Any one tried this before?

    I'll report back after next brewday. Last brew I was able to get the wort into the mid 70s so I don't have too much further to go. If it doesnt work out I can always buy the pump. It was a fun project though. :slight_smile:

    Parti-gyle brew day.
    Today it was a Brut IPA using Hornindal, and a Grisette I pitched with the 2nd version of a Bit o Funk.
