End of Days

Saison is a gastropub that is heavily inspired by the American South and Central America. This drink was created for our first event we did for the Mayan Long Count Calendar end date. We brought it back for the summer cocktail menu because it is an unbelievably refreshing drink. The rad thing about End of Days is that it melds three elements that Saison is very much in love with: agave spirit, American IPA and bitterness. The earthy, peppery notes of blanco tequila (has got to be 100% agave blanco tequila) play very well with the citrus and pine notes of an American IPA. The IPA is complemented by the bitter orange flavor of Campari. The lime and demerara syrup brighten and lighten the cocktail, which most any bar anywhere in the country is able to make and make well.
0.75 oz 100% agave blanco tequila
0.75 oz Campari
0.75 oz lime juice
0.5 oz demerara simple syrup
1 oz Strangeways Phantasmic East Coast IPA, or other American IPA
Place single large piece of ice in Old Fashioned glass, combine all ingredients in shaker tin except for IPA. Fill shaker with ice, shake vigorously until shaker is very cold to the touch, double strain with a Hawthorne & then a mesh strainer into the Old Fashioned glass, top with IPA, garnish with lime wheel. Serve your friends first! ■
