This beer is Belgian in derivation and uses the same yeast strain as the Illustration Ale. A whole bag of Melanoidin malt was used to give a reddish hue and to intensify the malt flavor and aroma of the beer. It was very lightly hopped and 84 pounds of raspberry purée was added to the kettle very late in the boil. 84 more pounds of raspberry purée was added post fermentation. The resulting flavor profile is a nice raspberry nose, a malty toasty body with some chocolate notes, and a late raspberry finish. The beer is around 6.0% and is brownish red in color.
