Win Bic is a new friend in the X-mas family from Mikkeller. Its a blended Spontan Ale and Saison, It is 6,0% abv, It is awesome and it comes in a magnum bottle. Cloudy light orange with a fine foamy thick white head.
Aroma – A mild spicy impression with acidic green apples, cloves and a sweetness as from dried apricots. We also find some bitterness as from lemon peel and a lactic touch. You clearly sense the saison notes as white pepper and mild various spices.
The taste blasts out the saison expressions in the beginning and we think of oxidated apples as you find in certain ciders – after that you get the lactic and sour impression that appears very refreshing and drinkable. A freshness topped with dry impressions of the barrels. You feel like another sip.
The mouth feel is not as carbonated and fizzy as in most of Mikkellers spontan beers. The finish is very dry with a touchy bitterness that again reminds of citric peel. For some this citric bitterness could get too much.
It certainly have a Christmas like expression. Would compliment curry heering or other lightly spiced fish dishes well.

Reviewed from notes. Poured from a 750 mL bottle into a Brooklyn Brewery tulip glass.
A: A mildly hazy gold with some chill haze. A fluffy two-finger white head with decent retention, and a good amount of visible carbonation.
S: Lemony citrus and citric acid, and some earthy mustiness that makes me think there's Brettanomyces. Light biscuit malts and light tartness. Some fleshy apples with a pineapple/tropical fruit as well which makes me suspect Brett even more. Not a big aroma, but it has its appeal.
T: Citric acid tartness and lemon zest. Some yeast, and a pale malt body that still has some biscuit sweetness. Brett barnyard earthiness and pineapple again, but it isn’t quite as big as the nose suggested. More saison yeastiness and dry lactic tartness near and through the swallow.
M: Light body, alcohol well-hidden. A good amount of carbonation sensation but lower than the appearance suggested.
O: A weird but not unappealing beer. Light tartness, but not enough to stand on its own. Not big funk, not the layers of saison complexity, not the minerality in goses or berliners. But it’s fine, I guess. Nothing that jumps out at me that I’d be in a hurry to drink again.

750 ml bottle, no bottled on date or vintage date. Grabbed this bottle from the local bottle shop as the summer season quickly draws near. "Spontanale & Saison Blended Holiday Beer".
Poured into a Duvel tulip snifter.
A - Golden orange pour with over a finger of frothy off-white head, leaves good spotty fluffy lacing behind. Not too much unlike a traditional lambic ale from Mikkeller. Appears adequately carbonated. Looks very nice.
S - Initial blast of funk / sour. The spontanale and the saison blend very nicely - notes of funky earthy yeast, cold leather, mild spice, notes of citrus, mashed apple, pear, clove, white pepper, lemon.
T - Taste is the same: crisp, yeasty, fruity. Notes of mashed green apple, pear, white pepper, clove. Mild tart / acidity. Notes of grains / wheat. Peppery spice from the saison side seems to emerge more as the beer warms a bit.
M - Feel is smooth & crisp. Medium-bodied with good carbonation.
Overall, the blend of spontanale and saison really work well together and complement one another nicely. Very unique and complex stuff from Mikkeller. Recommended.

On draft at 44 Stone Public House. Poured a slightly cloudy, golden yellow color with a small, off-white head of foam. It smelled of green apples, lemon, caramel and spicy white pepper. Sweet caramel taste with green apple, tart lemon and subtle spices.

750ml split on this particularly wintery night.
A - nice bright orange pour with some haze and lots of carb bubbles. White head stick around nicely as a mostly full thin cap and thick ring with a good amount of lace splotches.
S - on the faint side. The saison is prevalent with farmy yeasts, earthy and grainy tones. Some tart apple and grapefruit.
T - more tartness here with definite a sour apple feel going on, pretty acidic, some lacto sour. Still a good amount of grainy farm yeast bringing out the saison side. Lemon, grassiness, some spicy Belgian candi sugar.
M - a bit cumbersome for 6%. Kind of abrasive acidic tones at times and a sort of hefty and chalky feel to it. Highish carbonation is fine.
O - The literal blending of a sour and a saison is nice, good flavors from both and decent complexity, does feel a bit muddled overall though. The sourness feels a bit plain and it winds up feeling a little thrown together. Can't say there's not much winter-ness either other than maybe some pine-ish tones. Decent sour saison though.
