I am awed.
I'm also not exposed enough to Dunham, as Concubine is my second. The first, Rustique, also a saison was 4 years ago.
Concubine is brought to me courtesy of the curators at Rare Beer Club. I poured my copy into my Fin du Monde tulip; brewed of course by Dunham's fellow Quebecois at Unibroue.
Concubine opens with a vigorous foam for an ale using Brett. Inviting me further are Smells mostly of lemon with the tea/herbs in the background. Tastes simply are exceptional: blending a varied grain bill (true to style) brought together by the peppery yeast balanced further by the herbs/tea. (I'm thinking teas make a great substitute for relying on hops.) Thirst-quenching, the herbs/tea dry my palate nicely and encourages me to take another bite of the Roman-style medley of pizza all are enjoying on this hot summer evening.
As for my micro-review, the curators at Rare Beer Club spend almost a page for background on Dunham; so I need not repeat. But I did go on Dunham's website and I am further impressed with not only their brewing, but also how they brew for their food. While probably a day trip from Montreal, I am thinking quite seriously of adding Dunham to my North American Belgian Brewer Bucket List. Meanwhile, please ship more to the U.S. A Votre Sante !

Poured from 750 mL bottle into cervoise.
A: Pours a light greenish yellow hue with extremely active carbonation jets fueling a 2-3 inch bubbly white head with excellent retention.
S: Clove, fresh grass, white pepper, funky lemon, and some delicate fruit notes in the background.
T: Fresh lemongrass, green tea, herbaceous, dry crispy rice, and delicate citrus notes.
M: Light body. Extremely effervescent and refreshing. Light citrus sweetness. Dry and crisp. Soft wheat feel.
D: An interesting brew and a phenomenal one to enjoy on a hot summer day. Super refreshing!

Crystal clear, giant bleached head. Some lacing; rock-solid retention. Lovely looking. Pretty pungent citrusy-floral nose with minty-spicy and slightly vegetal tea character. Flavor is fairly similar. Floral, soap (but not too heavily so), cracked pepper, a crisp, dry character from the rice. The tea is definitely there throughout, herbal almost minty richness to it; somewhere between assertive and strong. Dry as all get out. Uber-drinkable.
This is yet another example of how great Dunham is. It is a solid beer, to style that is made in an off-kilter way and that showcases different ingredients without being gimmicky. A very nice saison to start with an interesting ingredient showcased. I have never had matcha before, but damned if I don't feel like I have now.
