Mmmm, a Brett Saison from CBC, can't wait, tough cork
Pours a small fizzy bubbly foamy head with fair lacing, mostly clear pale straw color
Nose brings plenty of Brett up front, funky farmhouse and some barnyard like funk maybe Brett B, but also a big tropical fruit, pineapple, papaya, mango, etc, like Brett C, citrus, interestingly some banana fruit esters as well, grainy doughy malt and possibly creamy wheat, some saison-like fruity esters as well so maybe started with the saison yeast especially the fruity esters, mostly citrus and some banana, and faint hint of phenol spices, but a nice sour tartness from Lacto., nice buttery slight toasted oak, and some white wine
Taste brings more of everything from the nose, nice saison base, light grainy gristy malt, doughy creamy wheat notes, then lemony notes, some lactic acid, buttery oak dominating as well as white wine, buttery oaked chardonnay, nice citrus, lemony and some star fruit like, some farmhouse and barnyard funk but not a lot, fair tart acidity, fruity esters from the saison, citrus mostly, and hint of phenol spices again, some tropical fruits in the background less pronounced that the nose and again Brett C like tropical notes, mild flemmy drier finish, fair acidity still there, lingering Brett funk and acidic citrus
Mouth is med bod, higher effervescent carb, fair acidity and a little flemmy
Overall very nice saison with good Brett, nice blend of the Bretts, Lacto, and saison yeast, quite nonetheless.

A- Hazy yellow draft pour to a tulip. Foamy white cap ascends to an inch high with fairly good retention. Medium ring drops a few sheets of lace.
S- Tart and a bit funky with underripe stone fruits, vinous grapes, wet old oak, lemon lactic, yogurt, passionfruit and a hint of coconut somehow.
T- Coconut somehow... very interesting and authentic. Lactic acid, lime yogurt, underripe sour stone fruits, slight passionfruit, a hint of tropical fruits, sour grapes, a touch of horsey funk straw brett, musty grapes and pale barley. Dry.
MF- Light bodied with a medium high carbonation. Foamy and slightly puffy texture. Ends tart and dry.
That coconut note is great here as it balances off the lactic sours, stone fruit, lime and grape flavors so well. Wild Saison on point.
