Poured into a tulip glass by waitress Dorsey at the Gingerman in Manhattan NY.

A: Bright and cloudy with small head and good mini legs for the entire quaff.

S: Fruity sourness, detected berries to my nose

T: Big time sour, reminded me of a wine more than a Saison, but was glad to have one that is clearly an opposite spectrum creationi.

M: Slick and tangy with the carbonation resonating till the last drop.

D: Low but my fiance and her friend loved it, therefore I shall pull for it again at a later date.

just found my notes from the pint I had at the Diamond a few weeks back.

pours a cloudy yellow with little head to speak of.

Sour nose, with lots of Lemon perhaps a little lime in there as well mingle with the expected Barnyard earthy smells

This one really makes you pucker, the citrus is really strong, also a good amount of funky earthiness. Really out there as far as Saison's go, really spicy on the tip of the tongue. A pretty radical interpretation of the style. The best way to describe this brew would be aggressive. It really assults your pallete on every sip.

I've had a few pints of this over the last few weeks..3 or 4 at the diamond and one more recently at the Blind Tiger, while I like how out there Defiants Saison is, it's not always an easy drinker. Hard to have more than one in a session but a must try for any fan of Saisons

A-pours a very hazy slighly dark yellow. Head is pillowy but dissipates fairly quickly

S-very citric. Slight smell of funk

T-very citric as well. Overall a tart experience. There is an undercurrent of funk here as well. Notes of green apple appear as it warms. There is also a mineral quality as well like in San Pellegrino

M-on the thicker side and a mildly stinging carbonation

D-this drinks more like a lambic than a saison. A good experience but not one that is worth the money for me.

This beer was one of their "Cellar Series" beers, which is available in 750 ml bottles that must be drank at the brewery. It poured a light golden body with minimal lacing. The smell was slightly sweet, but nothing really noticeable. The taste was a little bittersweet/tart with a malty aftertaste, but it was rather refreshing and cooling, good charactersitics of a saison. The mouthfeel was slightly thin, but that is what I expoected. The nice and light body made it cooling to me since it was pretty hot when I was there. This beer is pretty drinkable and very easy-going. Nice, refreshing nature makes it a great beer to have on a warm day. Also, there seemed to be some bottle fermentation as their was a nice amount of yeast at the end of the beer (went from golden body to darker gold color). Honestly, even drinking that was not too bad, although slightly thicker and sourer, but it was an alright finish for those who care to venture to a nice, refreshingly tart brew.
