Cathedral Tree is a beer that pays reverence to the timeless lager style – Pilsners. Fermented entirely in 500 Liter oak puncheons, to incorporate Old World methodology and provide a mellow tannic structure that lends a full mouthfeel and support for classic German noble and modern hops. Finishes crisp, clean, and refreshing as any Pilsner should. Look for Cathedral Tree in 16-ounce cans. And just like the actual Cathedral Tree, this one is staying firmly planted at the coast.

16oz can at share. Clear golden pour, nice full foamy white head, lacing. Clean grainy aroma, bready, floral. Taste is malty and sweet, bready, crisp with some grassy flavors. Well done pilsner.

From a can in Portland. Someone here called it a slightly more complex Pilsner. That feels about right. Light, crisp, but just a little extra going on.

Sampling a 16 oz can at cellar temp and poured into my .5L dimple mug. Date stamp is born on 1/4/2023.
The beer pours a bright clear golden color with a dense sort of creamy bleached white head. this foam fades slowly but remains a sturdy surface covering throughout the sampling. I get scattered lattice as I sip the beer or swirl the glass.
Aroma is grainy malts and a bit of light fruit, (white grapes) and some light doughy yeast note. No hint of the low ABV. Also not sure what the barrel fermented piece has done, seems no barrel character.

First sip reveals a light body and smooth texture. Very fine and only slightly tingly carbonation. Beer drinks very easy.
Flavor is similar to the nose, with grainy malts and some light fruit, maybe a little spicy hop and then the white grape finishes and lingers, while drying out my palate.
Very easy to drink and enjoyable flavor profile. Nice Pils, not too sure about the barrel piece, but I enjoy the beer.

just a splendid offering, and for all the trends happening with pils right now, italian, new zealand, foeder, or otherwise, this is definitely my favorite, the oak fermented, so much depth in such a drinkable brew, we need more of this in america. the art on the can is fire, the pour is shiny and golden if imperfectly clear, and it holds over an inch of airy and peaky white head. the nose is subtly woody, with dry european pils malt and perhaps a bit of slightly richer grain front and center, faint white wine, bready lager yeast, rustic full spectrum grain decoction mash character, and herbal hops that fit with what else is going on, less dry than expected it seems, but dynamic in a way thats still real approachable, wow, i immediately wish we got more than one can of this, a pint is not going to be enough! the oak seems untainted by whiskey or wine or anything, but also isnt pungent enough to be new, not enough tannin or vanilla or intensity, and i dont think this is blended with unoaked beer, so its well seasoned and tame in here, but it provides a neat depth, subtle as it is, and i think it helps the yeast pop off, still obviously a lager, but now some super faint funk to it, which i adore in this, and its so dry, like it had plenty of time to do its thing. the grain tastes a touch fuller than most, following the brassy color, but its not sweet, and i like the sort biscuit character here, great with the yeast complexity. the hops add some back end bitterness and appear fresh, but this is not a hop forward brew and it doesnt need to be. so refined for being in a barrel, so bubbly and smooth feeling, i love the texture almost as much as the flavor. i already cant wait to drink this one again. outside of the typical fort george wheelhouse in my experience, but this beer is incredible!

16oz can, over 2 months old

Pours over a finger of white head into my Willi. Mostly fades within a few minutes, leaving behind a small film. Lacing is thick for the most part. Body is just a shade above pale. Despite it being unfiltered, it’s very clear, with a moderate amount of bubbles coming up. Looks pretty nice.

Some noble hops were present when I popped the can, but in the glass the nose is subdued. Faint hoppy lemon, slightly acidic/tannins. Really not getting much here.

Flavor tastes like nothing…really not sure what’s going on here.

Carbonation is elevated. Body is very light and crisp. Just slightly dry. Bitterness is somewhat low. Overall a nice and crisp mouthfeel, really the only bright spot here.

Drinkability is high, though any amount of flavor would go a long way.

This is just incredibly flavorless, I’m really not sure what happened.

Slightly cloudy golden body, otherwise clear. Light lemon, mild herbal bite and crackery grain. Light overall barrel. Clean with a light oak vanillin. Lighter bodied. Good carbonation. Essentially a slightly more complex Pilsner. Not bad.

16oz can served in a can-shaped glass. Dated 06/29/20.

Pours clear golden with a big fluffy head that doesn't last long. Not a lot of visible carbonation, at least not while it's at rest. Smell is lager yeast, a little barley tea, a little oak, and moderate grassy/lemony aroma.

Taste is rich and full -- lots more (but not overwhelming) lager yeast flavor. Barley / husk flavor. More oak bitterness. Grassy and lemony is clearer. None of it is too much, all of it is nice.

Mouthfeel is very dry. Overall, I really like this beer.

with so many hazy and milkshake beers out , it was great to have a pilsner. this one is barrel aged and they did a great job. nice malt ang hop character

16oz can purchased at Nectar, in Kendall Yards, Spokane, Washington, for $3.49. The can label calls it a "barrel fermented pilsener." According to the stamp on the bottom of the can, it was canned on May 15, 2020, and below the date, the can is stamped "oaken sanctuary."

Once in my glass, this was a slightly chill-hazed straw color, with a big, pillowy, bone-white head. Lots of lace.

Soft, herbal nose, with a little bit of oakiness. Small amount of crackery maltiness.

Like in the nose, herbal hops lead the charge, but the time in the oak has softened their impact. It doesn't scream "barrel aging" like some beers, but the barrels have shaved off a lot of rough edges, especially in the finish, which is not crisp for a pils.

Fairly light bodied, with a soft, clean mouthfeel.

It's not the most characterful pils I've had, but keeps the flavor of the style and is incredibly drinkable. I feel could have a lot of these in a sitting.

A: The beer is clear light yellow in color and has a moderate amount of visible carbonation. It poured with a finger high white head that left a patch of bubbles on the surface, a narrow collar around the edge, and a thin film of bubbles on the remainder of the surface.
S: Light to moderate aromas of grassy hops are present in the nose along with underlying hints of pilsener malts.
T: The taste follows the smell, except that the flavors of pilsner malts are a touch stronger and the hops also lend some bitterness.
M: It feels light- to medium-bodied and clean on the palate with a moderate amount of carbonation.
O: This pilsner is very easy to drink and has a delicate aromas and flavors that aren't overpowering.

Look: Clear straw golden topped with a pure white head that recedes quickly, leaving good lacing
Aroma: Oak tannins, pilsner malt, spicy hops, lemon zest, and cracker-like malt notes
Taste: Pilsner malt with awesome wood tannins underlying – spicy and grassy hops join in along with more barrel character. A dry finish
Mouthfeel: Spritzy, flavorful but light and dry
Overall: This is good stuff. A super tasty and unique-to-me but welcome take on a favorite style of mine. Oak barrel notes take this already tasty base beer to new depths. Hits the spot on a nice day. A winner

Classic golden clear body with a webbed white head. Smell capture biscuit and dough with characteristic sharp grassy hops cutting in. Taste has all of that but with a tiny but steady great dry earth base that the bread and hops play off of, good graininess as it warms. Feel is higher in carbonation but very crisp, sharp and bready. A very good pilsner!

Can from New Seasons. Canned 30 Mar.

A clear light yellow with a dense, off-white head with excellent retention and lacing this looks excellent. The nose is soft, lemony, earthy, lightly spicy with a soft woody note to go with a gorgeous doughy malt. The balance between the lemon, the grass and the dough malt is quite excellent. The palate opens softly bitter with lemon, earth and mint, along with a soft, redolent malt character. Dough, Pils malt, fresh bread, a touch of light soft oak. The foeders seem to add a soft fullness that's impossibly light, a filigree of dough and lemon. Drying, delicately sweet on the finish, this beer is medium light in body and softly carbonated. Exuding balance and confidence, this is a pretty remarkable beer.

Hazy gold with three fingers of white head. Rings and splotches of lace appear as the head drops.
Smell is herbal grassy hops with cracker malts.
Taste is herbal grassy hops with the cracker malts.
Mouthfeel is light to medium with good carbonation. Finish is dry and mildly bitter.
Overall a tasty Pilsner.

1 month old can poured into a pilsner glass. Nice and almost crystal clear pale yellow on the pour, nice 1 finger head that settles quickly into good lacing. Very strong carbonation here, at least for my can. Nose is a tad rooty, neutral light hop, maybe some yeast. The mouthfeel is good dry and crisp. The flavor is a tad bitter floral hop up front, going into some lemongrass and maybe ginger, finishing with creamy malt on the back end. There is something unique there I just can't quite pin down, and it is probably tannin related from the barrel fermentation. Very drinkable.

This is a really good crisp and refreshing American pilsner. I could drink it all day, any day.
