Baby badgers sleep beneath a ceiling of stars every night, so does every tree and most closed-up dandelions. Hikers, night-strollers, campers, bats, crickets, and trout are all tucked up in their slumber to the celestial radiance of the infinite. All the creatures we love and respect. All the creatures we’d happily share a beer with.

We have a ceiling of stars – a nice clear night – about 261 days per year on the North Coast. But we only have Ceiling of Stars – a crisp, light, West Coast Pilsner – for a little while. The perfect union of a West Coast IPA and a German-Style Pilsner. Drink it in.

BREWER'S NOTES

Hops: Mittlefruh, Mosaic, Citra, Columbus
Malt: Rahr Pilsner, 2Row, Weyermann Carafoam
Yeast: Harvest

My god, it’s full of stars!

West Coast Pilsner.

Pours from the can a light gold. Stunning clarity. I found a fruit punch character on the nose, a faint touch of pine, with more of the same on the sip, followed by a lightly bitter finish a gentle effervescence keeps it lively.

Just a slight haze on the yellow brew with adequate foam in the Maredsous goblet. Clouds of melon and lime in the nose. Sudsy mouthfeel with a lively spritz. This is surprisingly sweet. Flavor is a rich blend of fruits with a citrus tang. Tastes of ripe honeydew, sweet bread, and a squeeze of lemon. Overall this is quite delicious, but that candy-like taste makes it hard to drink much of. From the 16 oz can purchased at the Fort George store. Lovely name and a beautiful label.

16oz can

Pours a finger of white head into my Willi. Retention is below average, and the head quickly fades. Lacing is nonexistent. Body is golden yellow, clear, with minimal nucleation.

Nose is citrus rind, zesty, catty. I loathe catty, so this is a bad start.

Flavor isn’t extremely catty, but it’s present enough. Slightly herbal, faint dankness.

Carbonation is medium-high. Body is medium-light. Somewhat light bitterness considering the style. Hops have a small perceived sweetness. Not super dry, but the beer leaves the mouth dry - not lovely there. It’s not a bad mouthfeel, but it can be a little unpleasant after the fact.

Drinkability is fine.

Overall just not very enjoyable.

Web site Light amber pour, frothy head, thins out quickly. Nose is a faint aroma of biscuit dough and a hint of floral. Described as " The perfect union of a West Coast IPA and a German-Style Pilsner" but we're mostly getting a well-rounded lager with a some ale-like bitterness. The net effect is a sessionable beer, refreshing and with a nice carbonation level.
