As we laid this beer to rest for its second round of barrel-aging, we were surprised by the expressiveness of the flavors the barrels provided. Vanilla extract is not a new ingredient to us, but the flavors we extracted from these barrels is. As these barrels continued to mature over the past couple of years, we waited for the right time to showcase them, that time is now.

A: Poured into a snifter to a black beer which is topped by a finger of rocky dark tan head which fades quickly to a collar around the edge of the glass with minimal lacing.
S: Smells of tons of vanilla along with a good bit of barrel notes, some dark chocolate, and roasted malts with a little coffee
T: Taste is dark chocolate, vanilla, coffee, roasted malts, oak, caramel, and more vanilla. On the swallow there's even more vanilla, some charred wood, smoke, roasted malts, coffee, and bittersweet dark chocolate with some lingering vanilla.
M: This beer is pretty big and somewhat sticky in body. Carbonation is low, but adequate for the style while the beer has a drying finish due to the monster ABV.
O: Overall this is one intense beer. Really nice flavors and complexity. Somewhat balanced as well, but the vanilla notes are the star of the show. 10 oz cans are probably the perfect size format for this monster as it's definitely a sipper.

Look: deep, dark...some ruby highlights when held to light. Sparse head on the pour that almost completely dissipates.
Smell: vanilla is prominent, but not like most heavy brews I’ve had. It ‘s a rich, velvety, refined vanilla. And perfectly complimenting my favorite stout.
Taste: like the nose. Near perfection. Decadent, gentle giant, unbelievably drinkable for a huge beer.
