Imperial stout with Cabernet Sauvignon grapes aged in French oak puncheons
Inspired by the sweeping views and elevated landscape of the Atlas Peak AVA in Napa Valley, we set out to make another beer-wine hybrid treat with our good friends at Erosion Wine Co. We blended and fermented our Black Tuesday imperial stout on the skins and musts of Cabernet Sauvignon grapes grown in the elevated Atlas Peak AVA region, then aged it in French oak puncheons. The result transcends the boundary between beer and wine for a delightful indulgence.

Pours a very dark brown, no head or lacing. After about a half hour, a redder color emerges on the edges. Nose is has elements of cabernet and an intense stout - oak, juicy, dark red fruit, leather, molasses, dark chocolate, booze filled chocolate candy, vanilla. The aromas don't quite meld for me - it feels like the wine is desperately trying to pop out and become more expressive, but the stout base is just too assertive to allow it to develop. The taste melds the flavors a bit more successfully - the sweet, tart, and especially tannic notes from the wine do meld with the base stout and smooth out its rougher edges. Fruit flavors become more expressive after a half hour. The finish is similar to a rich milk chocolate in that it coats the tongue and lingers. A very long finish with tannins eventually emerging. Mouthfeel is moderate with no carbonation. I think this is a pretty cool beverage, and would like to see more in this direction. I think having a more assertive wine note, though, would brighten things up a bit, particularly on the nose. Would also definitely recommend drinking this one on the warmer side.

A- pours black in color with a one-finger foamy khaki head that has short retention and leaves nothing behind
S- initial aroma smells just like a juicy cabernet; cherry, blackberry, vinous grape, even some jammy raspberry. Undertones of french oak pop through, as well as chocolate, molasses and booze from the base beer
T- juicy dark fruits up front that taste just like a cabernet; blackberry, vinous grapes, even some raspberry and blueberry. Mid palate gives notes of anise & french oak. The BT starts to make its presence near the end, adding chocolate, molasses and that signature boozy Bruery malty note. Lingers of juicy cabernet grapes
M- medium body with low carbonation leads to a viscous mouthfeel with a juicy, astringent & boozy finish
O- cabernet drinkers will really enjoy this one. It's pure cabernet up front, with that malty BT to finish, well done
