Run, run, run, as fast as you can… it’s gingerbread season, and we’re feeling festive! What better way to celebrate than with a delicious gingerbread-inspired imperial stout. We added a bit of molasses to the boil before aging in bourbon barrels. Then we added all the classic spices— cinnamon, allspice, clove, and nutmeg— along with graham cracker to capture the rich sweetness of a fresh gingerbread cookie.

Here we go, yet another in a long lie of double digit abv pastry-esque stouts from the Bruery.

Imperial stout pours black. Glad you got that info. Impressive brown head 5/6" deep poured into an Eclipse snifter. The aroma stood out different, bourbon and graham cracker seemed to be the most plentiful.

Taste revealed the ginger was used sparingly, which is appropriate given how much it can dominate in larger quantities. The taste offered more nuance in terms of bringing some cinnamon into the fold. The alcohol was present and in expected heft. Molasses might provide a slightly drier back end mouthfeel wise, but not super discernable in terms of taste. Its sweet, but not really with a molasses/maple kind of way. Six days on the road and I'm gonna see my baby tonight. Its sticky and all that jazz.

At the end of the day its probably just a one off for me. Not a bad beer, but there's cheaper pints I'd prefer to have.

Copenhagen 6/11 2025. 47,3 cl can from DrikBeer web-shop. Can in the Bruery's usual design with a hand drawn resume of the Spielberg movie Catch Me If You Can based on Frank Abagnale's memoirs.

Pours opaque dark brown with a small beige head. Stable. Settles as a 0,3 cm thick layer of foam just covering the surface of the beer. Clinging to the sides of the glass. Substantial lacing.

Aroma is intense with a sweet, roasted and dark odor mingling with a prominent scent of sweet spices and notes of dark alcohol. Dark roasted malts, toffee and sweet biscuit. Ginger and mint. A whiff of cinnamon. Raisins anf Bourbon,

Light carbonation. Rather thick, oily, soft, smooth yet a little sticky, viscous, lightly tingling texture.

Flavor is intense with a strong sweetness followed by a medium strong bitterness. Aftertaste is bitter with a fistic sweet and a bit spicy undertone. Lingering. Finish is semi-dry with wit a strong touch sweet spice.

Quite the sweet spice bomb.

16oz can poured into a snifter

A- pours jet black with a one-finger creamy khaki head that has good retention before settling to a thin film

S- plenty of spices on the nose with nutmeg and cinnamon leading the way, along with some allspice & clove. Chocolate and graham cracker undertones, along with molasses , brown sugar, creamy vanilla & just a hint if bourbon barrel

T- plenty of spice initially with cinnamon, nutmeg & allspice popping through. Mid-palate brings out notes of sweet chocolate and molasses, followed by a big graham cracker note. The finish gives more spice and sweet chocolate, along with a bit of vanilla. Lingers of clove & nutmeg. Had trouble finding the barrel

M- heavy body with moderate carbonation leads to a creamy mouthfeel that turns slightly chewy into a velvety, slightly warming finish

I am digging into a dessert stout for the last beer before I tuck in for the night. I chose a tulip glass for this beer, served at 52 degrees. The pour created a frothy and creamy light tan two-fingered head. The retention is excellent, dissipating slowly. Thick chunks of lacing were left from the dissipation. I am charting the color around SRM 34, dark brown with dark mahogany hues. The appearance of the beer is above average.
Nosing the glass, I smell bourbon, ginger, graham cracker, molasses, baking spices, dark roasted malts, chocolate, coffee, oak, earthiness, caramel, figs, raisins, and light citrus.
The flavors are dark roasted malts, chocolate, coffee, ginger, cardamon, light citrus, graham cracker, bourbon, oak, earthiness, figs, caramel, raisin, and bready.
The mouthfeel is creamy and thick. The body is medium-plus, has low carbonation, and has a long finish.
This is like drinking a bourbon barrel gingersnap but in liquid form. I love this beer—a smooth, creamy, and thick dessert beer to finish the night.

Pours used-motor-oil black with a beautiful two-finger khaki head. Looks thick and chewy.

Smells most of molasses and ginger, and the taste follows. I do taste a bit of a woodsy, smoky element here. A little off-putting at first, but graham comes in right after to balance it out. I’m getting a fair amount of clove too, but I think I’m sensitive to clove when it comes to beer.

A pretty good beer that I really wish I could’ve had around the holidays. It feels a little out of place the day before spring, but that’s MY fault, not the beer’s.
