Belgian-style tripel ale with huckleberry
Provisions is an epicurean exploration of the storied romance between food and drink. The Berry was brewed in collaboration with our good friend, Top Chef and food pioneer Brooke Williamson. This classic tripel was treated with ripe, juicy huckleberries, creating an easy-drinking, fruit-forward ale that begs to be paired with fine food.

A: Poured into a tulip glass to a deep reddish orange beer which is topped by a dense and slightly rocky finger and a half of off white head which fades slowly to a collar around the edge of the glass with minimal lacing.
S: Smells of huckleberries, some pale malts, and a little spicy yeast
T: Taste is huckleberries up front, some spicy yeast, a touch of orchard fruits, and some nice maltyness with a slight bready quality. On the finish there's more huckleberries, spicy yeast notes, orchard fruits and some lingering maltyness mixed with huckleberry
M: This beer has a body which is on the lighter side of medium with fairly assertive carbonation. The beer has a slightly drying finish due to the high attenuation.
O: Overall this isn't bad. Decent flavors and nice complexity make this one interesting to drink. The berries are a nice twist that add to the base beer without totally overpowering it.

Slight ruby to brown with off white one finger head. Nose is full of grape and blueberry jam, some light esters and light pale malt. Very jammy nose. Taste opens with some classic tripel esters, light berries, and a thin malt, a pale comparison to the aroma. There is a decent amount of alcohol coming through unfortunately. Body is medium with similar carbonation. Ends dry with a lingering vinous character. Overall it’s good, classic tripel with a nice addition but a little hot to be honest. It has that ester and alcohol clash a bit. It pairs well with the charcuterie I have though, cuts through fat. Glad I got it on sale and have another bottle to share later, but wish the taste matched the aroma. Maybe needs a little more time to develop.

Bottle is now a year old. The age has helped smooth out the alcohol and it’s not really even perceivable. Still quite jammy on the nose but not in the taste still. The time has helped it smooth out.
