Oak Barrel-Aged Spontaneously Fermented Sour Ale with Black Currants
We’re proud to present Cassaheim, a masterful ode to brewing and blending tradition. Our dedicated Bruers used traditional Belgian methods of turbid mashing and spontaneous fermentation to let the open air of Anaheim convey distinctive flavors. During its 24 months of aging, this spontaneously fermented sour ale earns its name with a helping of black currants added to hand-selected oak puncheons. This finished product balances notes of funky fruit and crisp, complex tartness our most keen enthusiasts will rejoice in.

Pours a somewhat murky apricot, 0.5" brief head with light retention and lacing. Nose is apricot, oak, grassy hop, more stone fruit, musk. Taste is nicely tart, with sharp and puckery apricot and kumquat balanced by some musky, grassy, herbal hop. Feel has moderate weight and some crisp carbonation that punches through. Overall, this was a pretty good lambic-adjacent beer that stood up to some age as well.

12.7 ounce bottle, 2023 vintage, says Bruery Terreux on the label but wasn't able to add this under their location listing. Served in a Teku, the beer pours a hazy orange/amber/pinkish color with about an inch off-white head. Head retention and lacing are both good. I like the aroma, the brew smells like dark fruit/black currants, funk, oak, hay and some lemony citrus. Taste is pretty much just like the aroma, but there's also some green apple flavors noticeable too. I think the black currant flavor stands out here compared to the others, but doesn't overpower them either. Good amount of tartness. Mouthfeel/body is medium, it's a bit coating and has a good amount of soft carbonation. I thought this one was good, worth a try if you get the chance!
