Reviewed from notes. Had on-tap at Cigar City's tasting room. Unfortunately, I don't seem to have made a note as to the serving glass type.
A: Very clear gold, with average visible carbonation for style and a finger's worth of white fluffy head with good retention.
S: Saison mustiness, a touch of apple fruity esters, and a light black pepper spiciness. Pale cracker malts as well.
T: Again, saison barn musk and black pepper, with a bready yeast presence that continues throughout. Earthy and moist. Again, I'm getting some light flesh fruit yeast esters pulling through. Cracker malt sweetness. More farmhouse yeast at the end and a dry finish.
M: A light body, with good carbonation sensation and the alcohol is well-hidden.
O: This was a bit different for sure. I'm uncertain if the fruit esters were from a Belgian yeast strain, or if they may have been subtle off-flavors. I'll bet on the former though - it wasn't as puckering as acetaldehyde. Not overly black pepper or moist hay qualities, but rather a balance of the two. I enjoyed it, but didn't find it to be something of which I'd run back for a second pour.
