I just drank the St. Idesbald Tripel, but this is not a side-by-side review because they are so different.
The Tripel would be great with a more active and flavorful yeast, the Amber already is. This is a malt-head's delight. And it shows Huyghe's genius to supplement its hoppy Delirium line with this lucious amber.
I'm Looking at a bounteous foam that after the head recedes, then coats the entire glass to its bottom... and it's got a pretty amber bod to boot. Smells excite me less, mostly malt and fall fruits (call it apple, but I like pears also.) Tastes are well-balanced for this malt-head; hops are only present and, then surprisingly, leave a lasting finish. Medium-mouthed to start, but towards the end I recognize that this is full and preciously soft.
Don't drink this too cold; as it warms, it will give you some form of ecstasy. A Sante' !
