An unrefined table Saison built from dynamics in grain bill featuring: Buckwheat, triticale, flaked oats, rye, vienna, wheat, and European Pilsen malts. This ale is not spiced, however, spicy notes are bolstered from the use of rye malt, Styrian Golding hops, Farmhouse yeast, and a wild Brettanomyces. A sharp and fruity flavor arises from the use of Lactobacillus to complete the delightfully refreshing and savoir-faire 'little beer'.

Red Wax/Capped
ABV: 4.3%
Poured into a Trillium glass a pretty nice hazy dark golden yellow color, pretty nice carbonation, with a quick/fizzy/small white head, which leaves some minimal sticky lacing behind. The nose is malty, yeasty, slight hop note, with some nice wheatyness, coriander, lemon, funky, tart, slight spice. The taste is pretty nice, malty, yeasty, hoppy, with some nice wheatyness, coriander, lemon, nice funkyness, tart, slightly spice. Medium body, ABV hidden very nicely. Overall, a pretty tasty brew. Watch out when you open though, mine was a slight gusher after the first pour.

I was having this Saison/Grisette from Trinity Brewing right before going to bed and I thought it was great, lots of flavors. I doubt it is retired as I just had it fresh.
Look: cloudy bubbly golden hue with an initially thick white bubbly head that quickly dissipates.
Aroma: complex pleasant aroma with wheat, yeast, oak, and tropical fruit.
Taste: It is funky, tart, wheat, oak, vineous, sweet, fruity, grapefruit, apple, peach, nice mix of taste. It is very good.
Feel: It is quite carbonated, perhaps too much, but I enjoyed it.

Cloudy gold pour from a semi gush produces a finger of off white head that leaves pretty quick and all that remains is a bare cap.
Complex aroma that is full of fruit, especially lemon-lime, funk, earth, and spice, with a mix of grainy aromas, sweet, and yeasty tart.
More funk in the taste than expected, with all the other flavors of the aroma present in abundance in a strong presentation. Earth and spice win the day, but a merest touch of sweet and tart citrus end it dry and just right.
Middle of the road for a saison in terms of carb., viscosity, body, and finish, but definitely at the upper reaches of what is expected from a grisette.
Excellent beer, though not a grisette to my way of thinking. A bit pricy for what it is so I recommend, but not enthusiastically.

When cracked open, foams out the top of the bottle. Pours a clear golden yellow, with a large, fluffy white head. The nose is funky, with lemon and a hint of tartness. The taste tart up front, followed by funk, and then overtaken by lemon. The finish is slightly spicy and tart. Overall, it's a good saison and the lacto and brett add wonderful notes to this. I think the age helped this out big time, but not sure if any longer would have helped.

375 ml wax capped bottle, 4.3% ABV stated on label, no dating on the bottle that I notice. Served in a chalice, the beer pours a slightly hazy gold color with about an inch and a half carbonated white head that fizzled away quickly. Not much lacing. Aroma is nice and tart, the brew smells like lemon peel, limes, pears, green apples and some spicy earthiness. It tastes like bready/grainy malt, Fruity Pebbles cereal, citrus peel, limes, melon, and funky earthiness. I think the flavor is more earthy/grainy than it is tart, but I like it. Mouthfeel/body is light/medium, it's smooth and well carbonated. I think it's a good overall brew, definitely worth picking up! $6.49 a bottle.

Open through the red wax, and the beer unexpectedly explodes. Not sure if this is gushing due the Brett. Yeast particle floating around like little worms. Not sure if this was expected either. Color is a blonde haze, but fine for this style. Flavor is very delicate and complex, but unfortunately ends with a metallic possibly oxidized flavor. Slight peach and apricot flavors. I would not suggest this beer to a friend due to high price, and rust on the top of the crown.

With every historic, traditional and rustic grain at its disposal, Trinity brewers spare no expense by using all of the in their brewing panty. From rye, wheat and triticale among others, the high flavor of Belgian saison is put on center stage with a heafty boost from tangy lactobacillus and earthy brettanomyces fermentation.
Its eruptive pour overtakes the glass and billows over with a loosely knit bubbly action that renders the ale zesty but still shortly after. With the earthen perfume of lemon, leather, lime, sea air, weathered oak and grapefruit swirling about the nose, its early taste is quick and confectionate, casting a hint of powdered sugar as the flavors begin.
But soon after, the sweetness recedes and the fruit projects, carrying aspirations of grapefruit, orange, lemon, lime, mango and kiwi along the way. Sharp in its sourness, its cidery, vinous taste is an extension of grape, apple and melon underpinnings. But finishing earthen with dry straw, peppercorn, grass and hay- the taste is remarkably of the farm.
Medium-light in body, the saison closes its taste with a grassy bitterness that carries remnants of citrus, cedar, leather and oak. Sourish late, the beer's acidity is playful and rustic while it cleanses the palate for a refreshing and thirst-quenching taste. An afterglow of attic-like mustiness remains along with a tincture of burlap.

12.7 fl.oz. bottle
Served in a tulip glass
It's a gusher! Once I managed to hurriedly pour in into my glass, I could see that this was a pale yellow, murky liquid. It was topped with over half a glass of white head that disappears quickly leaving no lacing.
The aroma is tart and lemon fresh.
The taste reminds me of lemon due to its tartness. The finish is clean and lacks the spiciness of a saison which is true to the grisette style.
I think the head takes all on the carbonation from the beer. It has an almost flat mouthfeel.
I like this beer, maybe even better than a saison. The lack of spiciness allows me to enjoys the tartness of this beer. It is quite refreshing on a warm spring day.

Maybe it's the little bit of age on it, or perhaps the subpar brew I had prior to this one, but I really enjoyed this. The unspiced factor actually took out some of the thingsi don't usualy like about farmhouse ales. Crispy and champagney mouthfeel. Experimental with rewards. Reminds me of some RR offerings....a lot of potential w/ trinity
