This is a unspiced naked Saison brewed with barley oats and rye. Free rise fermentation develops a light fruit and pepper, while the assertive hopping profile creates a dry finish.

375 ml bottle into a tulip snifter. Late 2017? release, had 9/28/20.

Pours a clear golden yellow, with a one and a half inch head of creamy foam with great retention and lots of foamy lacing. Aromas of barley malt, Belgian yeast, some rye- more as it warms, some black pepper, a generally grainy aroma, light funk, faint floral hops. Mostly similar flavors- Belgian yeast, barley malt, rye, floral hops, a little black pepper. There’s a light hop bitterness. Smooth, creamy, a solid light to medium body, well carbonated.

This far exceeded my expectations. A solid, delicious saison without any spices. The rye doesn’t have a big presence but is a solid contributor and the hops are a nice compliment. My first from these guys, would like to try more. Very enjoyable.

Devourer of Ears is a very saison looking saison. It's a brightly polished golden with a bit of chill haze running thoughout. Streams of carbonation spring to the surface but certainly slower than a 5%er. The cotton candy like head grows to three fingers in no time and after a long while eventually crackles to a thick cap while leaving foam plastered to the glass on the way down, lots of foam.

This beer is gigantic peach and apple off the bat, huge. The yeast profile in this beer is also very expressive. Soft clove and bubblegum float below more pronounced wildflowers and white pepper. There are a lot of esters getting thrown around in here, but in a good way. There's a noticeable sweetness, candi sugar I assume. A drizzle of honey and some light booziness wrap it up.

The flavor follows the nose pretty closely but does stray in a couple areas. The orchard fruits mentioned above are bold yet again. There's a noticeable freshly cracked grain presence that I didn't pick up in the nose. The spiciness is still there and fairly big. The back end is fruity and a touch alcoholic. There's a lot going on in this beer and while it's good, it verges on too much.

They did a nice job on the mouthfeel when taking into consideration the massive amount of alcohol in here. It's fairly light on the palate but there's a touch of stick. The carbonation is light but active. The finish dries up over a few seconds and leaves behind a soft bitterness and lasting spiciness. Dangerously drinkable for such a powerhouse.

Devourer of Ears is solid beverage. A bit of a novelty but certainly good. It's vibrant and bold. There's a huge yeast profile that adds a lot of depth and spice. The spice leaning saisons aren't in my sweet spot but this one is well made and interesting.

A: The beer is clear yellow in color and has a light amount of visible carbonation. It poured with a short bright white head that died down and left a collar around the edge, some patches of bubbles on the surface, and lacing down the sides of the glass.
S: Moderate aromas of yeast and apples are present in the nose.
T: The taste has flavors of apples and notes of spicy yeast.
M: It feels a bit more than light- to medium-bodied on the palate and has a moderate amount of carbonation with some dryness in the finish.
O: This saison seems to be much more fruiter compared to other beers in the style.
