i am stoked that trinity has just brought their beers to idaho, we are definitely hurting for good saisons and curious ferments in this market, so i think their stuff will fit in really well here. this is a crazy beer, as crazy as they always seem to be from these guys, a tart saison brewed up almost comically strong, and aged two years in zin barrels. it also uses zinfandel grapes, and has a pretty beet juice color from the fruit. its pretty still from the bottle, and i think i remember reading on the label that that was intentional, although i dont know why, i wish it had some more life to it, almost a cough syrup texture without it, but the flavors here are really intriguing, unique, and delicious. the wine element is strong here, both from the oak and the tannins there, and also from the fruit, which even though its not real sweet, leaves a lasting vinous mark on this, notes of blackberry, black currant, and port wine are also here. the strong alcohol presence makes it wintery, like all its missing is some mulling spices, and it also gives it fortified wine presence. tart but not too acidic, just a little bit funky, and with an absolute ton of wood on it, really mature and well developed. cool beer here, not sure why it is or needs to be so dark strong, seems absurd to me, but the flavors here are exceptional and this is another one of a kind beer from trinity. looking forward to getting back on the train now that their bottles are popping up all over the place here in idaho!
