i am so pumped to have trinity distributing beer to idaho now, i love what they do, and it looks like a whole bunch of different bottles have arrived recently. this must be a new one, never saw it during my years in colorado, its a spring saison with dandelion greens and sunflower seeds. i love how these guys find and incorporate such interesting ingredients to a lot of their beers. this one is so good, so drinkable, so subtle, really neat on the yeast side too, some belgian or french saison yeast esters for sure, pear and white grape notes, but also some mellow but well established brett here, funky, farmy, clean though too, and super dry at the end, a little spicy, even without the special ingredients, this would be especially good. the dandelion adds some neat bitterness in here, and an almost arugula sort of spiciness as well, peppery and snappy here. the seeds are cool in here, a nutty and toasted element that absolutely does not come from the malt at all, they are more obvious than i expected them to be, and they ground this, keep it earthy and organic tasting, real cool addition to the beer. there is a strange trajectory to this, an almost anticlimax of sorts, where the center is so clean that it almost doesnt taste like anything, its like a reverse bell curve of flavor, different than beer normally progresses, and i like that too, dandelion greens and seeds and some white wheat and pils malts up front, yeast and funk on the back end, delicate for its strength, not much body at all, just pure tasting beer too. so expertly crafted, awesome fermentation profile, and killer use of these neat ingredients. i loved this, and will be buying more for sure. hope they keep sending bottles up this way!
