Notes:
This is what happens when an American Amber meets a German Dunkel. Aromatic and Munich malts yield a slight sweetness balanced with a hint of chocolate roast. The result is a very approachable beer with a smooth distinctive taste.

Pours an amber brown with a good bit of off-white head that recedes to a thin layer on top. Smell is roasted malts, toasty grains, bit of german hops. Tastes nice and malty, lots of toasty bready notes and a medium body. Mouthfeel is moderately bubbly, closes out with a slightly overshot hop astringency and bitterness. Solid, enjoyable beer, but probably wouldn't buy again.
Feels much more like a German dunkel lager than a red ale.

Pours a clear reddish brown, small eggshell head fades quickly, no lacing. Snot locker gets a hint of warm bread, a bit of chocolate. and some malts. Taste buds get some sweet caramel a bit of hops. Thin not much carbonation. Overall, not too bad, but it'sa one'n done.

See-through ruby red/purple appearance.
HUGE eggshell head; a curtain of lace.
Sweet corn, mild caramel, mild skunk spray & faint acrid smoke notes in the nose.
Medium mouthfeel.
Sweet caramel & faint acrid smoke flavors up front; a puckering pickle juice finish. Terrible; I hope this went bad in some way & this wasn't constructed to end up this way.

Poured into a snifter. A clear chestnut brown color with a modest light tan head that left quickly. Aromas of roasty malt, caramel, some chocolate, and cherries. Taste featured caramel, burnt coffee, toast, some chocolate, and a hint of tart cherry. Medium-bodied and medium carbed with a sharp, metallic finish. Overall this was ok but the taste seemed muddled.

Smell - sweet caramel
Taste - slight caramel very slight malt but lacking much taste
Feel - medium light body and carb

The Big Muddy is staying within its banks.
At least, that's what Saluki tells me.
It is a nice simple beer: takes dunkel malts and makes an ale, but nothing extreme; no hyper-fusion.
Just a pleasant beer that Looks just different enough. Smells malty. Tastes that way, but balanced with modest hops. Feels a little thin, but it is is a clean finish.
Young brewery, giving fresh beer and measured, cautious innovations to a college town. Keep it up.

L: A beautiful amber color with a 1 finger head that slowly dissipates.
S: Light malt and hops scent on this one.
T: I am eating supper that consist of soup and a roast beef sandwich so that may throw this off a little bit but with that being said I really enjoy this beer. It tastes like it smells light malt and light hops present on this beer with a light scotch ale after taste but sweeter, very enjoyable.

Tasted on tap in Illinois. Great appearance, like an American Brown Ale. Thick head. Malty, nutty and caramel aromas are a highlight. Malty flavor reminds me of Old Peculier but there is something vaguely artificial about the caramel flavor. Thin body is the biggest drawback. A drinkable, enjoyable beer.

Clear amber-brown body, shallow light tan head, moderate loose bubbles. Nose is toasted malt, faint caramel and spice-like hops. Flavor gets better, with warm toffee nuttiness and vanilla-like notes and toasty-roasty malts. Faint chocolate and warm spices. Mildly sweet . Body is light-medium, easily drinkable.
The dunkel notes are definitely the highlights, but the weak body and head and common "American amber' presence dragged it down. Why the brewers even bothered adding the American spin is beyond me, this would be better as a fully German-style dark beer.

I bought this at the Binny's store in Bloomingdake, IL as part of a build-your-own six pack for $9.99, making this single 12oz bottle $1.67. Nice to see a beer named after the mascot of my alma mater - SIU. No freshness date that I could find. Despite the use of the word "dunkel" in the name, BA lists this beer as a red/amber ale rather than a dunkelweissen.
The beer poured a mostly clear iced tea color with a big 3-finder beige head that lasted several minutes but produced very little lacing.
Nice malty smell with lots of caramel and a little vanilla. Trace of citrusy hops underneath.
Caramel sweetness with a slight twang from the hops, but very little hop bitterness. Not very complex, but good flavor.
Watery thin body with moderate to medium carbonation. This is the beer's big weakness. It's way too thin.
Definitely sessionable with the low abv and no harshness, But I wish it had more substance.

This beer is really refreshing. For a classic Lager this beer is Delicious. I never would have imagined that the Big Muddy River in Southern Illinois could formulate such a nice crisp beer. Taste a little citrus, but definitely not enough to ruin it; just enough to add that acidic bite. Good summer drink

A friend handpicked this beer as one of three fillers for a six pack to bring back to me in Hong Kong. I like to try different beers from different brewers but to be honest, the packaging is not all that attractive to me, and I probably would not have picked this off the shelf. Poured the 12oz bottle into a pint glass.
A: It poured a clear dark rusty amber colour with a one finger head that dissipates quickly and no lacing.
S: Smells of malt, maybe plum and apple, but a hint of metallic at the end ruined it.
T: A bit light and thin. It was like watered down plum juice with an unfortunate light metallic aftertaste.
M: Light, goes down easy, medium carbonation.
O: It’s not bad and it feels great in my mouth, but the flavours could be more pronounced and the beer would improve plenty without the metallic smell and taste that lingers at the end.
