Another offering from our “Bones” series, featuring the fermentation of fresh fruit. In this instance California white peaches from Sanger, CA are fermented with a brett’d saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction. Santé!

Bottled 7/20/18, Opened 11/7/21
Crystal clear straw with hints of orange with a half finger white head that lingers. Nose is pineapple and pear with light wet hay funk. Opens with pineapple that folds into acreamy vanilla peach with a smooth white bread malt, and ends with a hint of oak tannins. Body is light with light to medium carbonation. Ends dry and woody. Overall not bad, everything is light and subtle but personally would like more funk and boldness, especially after 3 years.

Bottled 7/20/2018
Appearance is a translucent yellow / orange. Reasonably bright when held up to the light. Despite an aggressive pour, not much in the way of head. Some floaties, but that's my fault for pouring the last half ounce.
Aroma is relatively subdued until you get up close, at which point you get a strong whiff of tart, funky beer with faint peaches.
Taste has loads of musty funk. Way less tart than I expected based on the nose. Plenty of oak comes through on the finish. Peaches have mostly faded. Age has presumably robbed this of some of its carbonation.
Overall still tasty, but past its prime.

Looks like a yellowish orange blend when poured. Smells like faint peach and tart. Taste like tart with peach. Overall its not a bad wild ale, and goes down nicely.

Picked up a bottle of this when I was rolling through the Barrelworks.
Peach beer pours a peach color. You know, yellow and orange. Peach beer smells like peaches. Doesn't really smell like a saison here, getting more french oak sharpness and wild ale cultural sour push.
Taste is nice, sum of its parts, good sour and acidic profile neither too strong, acidic nor weak. Peach is prominent, but not so substantial as to dominate every other aspect of the beer. French oak gives it a white wine like impression alongside the peach. Dig how informational the label is. Carbonation hits plentiful but seemingly appropriate. While it is a light body, there is a chewy brett aspect supporting the peachy role. Plenty dry finish as promised by the commercial tug job.
$15 for a small bottle. Worth it one time, these are the masters of barrels here, but hard to make something like this a frequent banger at that rate, even if it is very good.

Smell: Leathery Brett tones supplemented by a light hint of peach; rustic and oaky
Taste: The peach is apparent, up front, but is enveloped by the leathery barnyard Brett flavor; oaky through the middle with a dry finish
Mouthfeel: Medium body with moderate to high carbonation
Overall: Given the provenance, I was expecting a bit more from this beer; I have had a few other F-W Bottleworks recently and this one doesn't rise to the same level

L - Golden straw/yellow color; weak effervescent head, a tad of lacing. Delicate. Really.
S - Pith of white stone-fruit and definitely Brett yeast on the nose; some horsy blank that smothers most other things. A bit of peach as it warmed.
T - Fantastic wild meets sour, the Brett and the Lambic yeast and bacteria are active. Recent 7.20.20 bottling, too, so it hasn't run its full rustic wild course yet. Not much peach but definitely more of the white fruit stone fruit pith action here.
F - Great natural carb action, fantastic mouthfeel from the prickle of Brett, in a good way.
O - This is a winner, cuts the line between a wild, a lambic, a saison, and a sour. RULES BE DAMNED. Nice job.

Pours lightly hazy orange with streaming bubbles. The nose is peach, watermelon, white wine, and vinegar. The taste is medium-sour peach, orange, banana, and honey. The mouthfeel is medium and soft. Overall, a worthy rating #500 for me. 4.25 across the board.
