In July 2020, our Terf (local dialect for 'wheat') was born for the first time. The first batch of this local wheat beer was back then brewed for us by Brasserie de la Senne from Brussels with old wheat varieties from the cereal network of Brouwerij 3 Fonteinen from Beersel in Brabant. Some of the brew was bottled into 33cl bottles, sold as 'Terf', and sold out in no time. Another part of the brew matured in our barrel room for no less than three years in oak lambik barrels. In November 2023, this 'matured' Terf was blended with young 3 Fonteinen lambik, in a 55/45 ratio. This Wilde Terf is the fruit of the collaboration between brewers and farmers around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural bond between Brabant and Brussels. This package contains three 750ml bottles of our Wilde Terf, which is limited to just under 2,500 bottles. An even smaller run was bottled on 375ml-bottles.

Bottled from 2023 - found in a specialty store in Austin, TX > brought back to Indiana. 3 Fonteinen never fails to disappoint. Pours translucent light amber, smell is subtle wheat and bret like an otherwise standard farmhouse ale. The taste - pretty complex, initial mouthfeel can taste some sweetness before feeling the sour notes; definitely feel some wild funk but it's not overpowering. Notes of fermented wheat with hint of honey and maybe citrus, overall quite subtle, ending with a smooth dry finish that doesn't leave an unpleasant mouthfeel. Paired quite well with Bellavitano cheese and a mushroom loaf from the local bakery - this beer complements umami flavors quite well. Overall a lovely experience!

Interesting brew - pours an opaque gold color with a very thin head that retained foam around the edges of the glass. Extremely funky nose with hints of brett, hay, lactic acid, honey, and citrus. The taste somewhere between a wheat beer and a sour with hints of grain, pear, orange zest, barnyard funk, and a slight undelying medicinal taste. Really complex - not something I'd want every day but definitely compelling.

(375 ml bottle $14.99 decanted off into a slender goblet at Beer Temple earlier this month)

Having seen a tin sign for Taras Boulba, I asked if they had any bottles. With none in stock, the bartender suggested I might try this instead. Given the brewers, I was all in. Having this listed under Gueuze is more apt as, early on, the acidity and funk of that component is front and center. As it goes, a subtle bready pale ale malt creeps in, though it muddies the mix rather than lending some depth and contrast. No discernible fresh (as opposed to aged) hop character, which would've been nice. Kind of wish this was a pale ale (even a stronger 6-7%'er) with a touch of Gueuze electrifying the edges, rather than a tilt in the other direction. I have to admit I got bored lil more than half way through and wanted to move on. Sounds more interesting on paper. Perhaps its age (wasn't a recent bottling) explains the loss in vibrancy. I can't say I wouldn't be interesting in having another go at this though. (2439)

Uniformly foggy orange-amber with a moderately short but lumpy off-white head clinging in thin doily ridges.

The nose is lightly oaky, faintly funky and walnutty while taste is gently tart pear with a hint of passion fruit.

Straight from the fields we ran our hands over last year, this is a crazy refreshingly bright, balanced lambic that finishes cleanly bone dry.
