1pt 9.4oz bottle packaged up back in March 2017, making this a 4 year old beer to the month

Pours up with a head that fades instantly, very hazy light yellow-orange. Smell alternates between a weird lemon and pickle juice combo. Taste lands decidedly on the wild side, but pretty mild still. I was hoping more of the golden ale flavor would shine through, it is mostly in the aftertaste, and in how sweet the beer still is... Up front it's a light green apple pucker, finishing with some Belgian yeast flavor and faint notes of Budweiser and finally that sweet Belgian golden ale yeasty goodness. Tons of barrel in the after taste, feels like I'm sucking on some oak woodchips.... this is a good thing somehow, though

A forgiving sour, mellow, perfect for me. I wish there was more to the Belgian base beer here, but the wild ale that developed is a delicious one

Bought from the remainder shelf and released almost 4 years ago, my copy was still in good Shape. This is my second from Fulton, and based on the first... I never would have guessed that Two came from the same brewer. Two is an interesting and accomplished ale.

Wilds are hard to rate for Looks because they lack foam; but Two certainly is above the average. Smells have more vinegar than encourages me. Tastes are tart, but not too tart. A balanced tart. Feel is cleansing before and at the table. Paired well enough with appetizers and salad.

I like Fulton. Even though they are the second oldest alternative taproom in the Twin Cities, this sophisticated Wild surprised me nicely.

Poured from 750 mL bottle into snifter. Bottled March 2017.
A: Pours a clear pale yellow with 1 inch fizzy/bubbly white head that fairly quickly recedes.
S: Soft citrus, moderate brett funk, dry cracker malt, white pepper, white wine vinous note, soft oak, and a hint of earthy minerals. Nice complexity!
T: The funk of brett and the tartness of pedio hits first, quickly followed by citrus (orange especially), white pepper, and dry cracker malt. Mild sour note from the lacto finally emerges. Soft oak and that white wine note eventually emerge too. Follows aroma well.
M: Surprisingly soft. Moderately tart and mildly sweet. Light-medium body. Pleasantly dry throughout. Lingers and matures nicely on the palate too.
D: A solid brew with good complexity. Given the special packaging and presentation (and price), I did have high expectations for this one...and Fulton didn't let me down! Seek it out and give it a go!

L: It looks bright straw gold to gold with streams of rapidly rising bubbles under a 1" white fleeting foam cap.

S: The Pedio and Lacto are all over the aroma with some of the slower acting Brett character starting to emerge. There is tobacco, fruit, over ripe fruit, a hint of and wet horse blanket.

T: tart and bone dry. The flavors are fruit, white wine, and over ripe fruit and then in the middle the oak kicks in bringing tannins to the table that add some drying astringency and depth. The funky Brett and Pedio character are behind the tartness and will grow as the beer ages. Right now they contribute to the over ripe fruit and funky white wine character.

F: It is light, refreshing and has above average carbonation with a definite tingle on the tongue.

O: This is a wild complex beer with complex and rich flavors. Over time the beer will grow more interesting.

Nonhead. Clear golden yellow.

Smell is of a nice white wine and grapes. Some funk and some sour.

Very nice taste that follows the nose. There is a very foul aftertaste that I can't get over however. Otherwise a nice beer.
