L - 2-finger dense, creamy offwhite head atop a gleaming orange body.
S - herb, citrus.
T - dank pineapple, grapefruit, earth, melon. Pleasing biscuity middle, with a bit of cheese and more dirtiness. Moderate bitterness. Low sweetness. No booziness.
F - medium body with appropriate carb.
O - great use of Simcoe.

Pours hazy gold with a one inch head of white. Moderate retention and lacing. Unripe peach, sugar-dusted grapefruit in the nose. Medium bodied with a soft mouthfeel. Peach skins, melon rind, orange pith on the palate. Finishes dry with minimal malt,
a balancing bitterness and lingering citrus.

(16 oz can, canned on: 03/26/24; purchased cold 4-pack at the brewery last week... poured into my Trillium fat tulip)
L: light amber liquid, densely hazy as opposed to sedimental cloudy; open rocky sponge of foam... laces in islands... persistent, pesky mess of a cap
S: Simcoe scented: pine/spruce, fleshy pineapple rind, lime and floral hints... relatively excellent intensity and dimension... almost a lime-heavy witbier spice thing coming up through the backs of the nostrils
T: dried pineapple, bitter orange, with a zesty bite of sort of fresh green pepper slicing flat up the middle... malt dust edging toward dry pancake in the near background foundation... resinous hop front to back... spicy menthol, underripe Bartlett pear nectar aftertaste... fragrant and fairly dry
F: liquid fleece... little bit of parching bite and cheek warmth from the hops and alcohol... thin sheets of layered resins raining on the palate non stop... concentrated clouds
O: arguably or easily the fruitiest of their hoppy beers I've tried... this tastes like few NEIPAs I've had; it's more of a modern-day American IPA... all you had to say was Simcoe (2291)

L -- Golden orange with moderate haze and a finger of dense off-white head produced with moderate pour. Great retention and lacing. Very canonical NEIPA appearance
S -- Lemongrass, honeydew melon, lime zest, clementine, dank leafy earthiness, biscuity pale malt sweetness
T -- Orange pith, fresh cut pine, black tea. Not too mineralic, which is nice
F -- Soft and drinkable. Bitterness lingers through the finish and doesn't fly off the palate, but also doesn't become acidic
O -- Really lovely exhibition of the oft-overlooked Simcoe. Simcoe and Nelson are the two hops that Hill Farmstead seems to really have exceptional sources for

Had 2 days old from the source at Hill Farmstead!
Poured a beautiful straw gold with roughly 1 finger of foam. Lacing for days. Nose was extreme dank and musty. Slight cattiness. Taste followed the nose to a T with moderate bitterness on the finish. Medium mouthfeel and well carbed.
The absolute best expression of Simcoe I've ever had.

From a 750ml swing-top growler, filled 03/01/23. Served in an IPA glass.
Pours an unfiltered burnt-orange-gold with two fingers of creamy-white head. Retention is excellent, leaving a thick, sudsy cap and a heavy blanket of bubbly lacing.
Nose is floral-spicy, mildly sweet and fruity. Aroma of orange peel and vanilla.
Taste is earthier, less sweet and more bitter than expected. Tasting white grapefruit, lemon pith and oily orange peel with an earthy, gritty, peppery/piney finish.
Feel is clean and smooth, medium bodied with bright, zesty carbonation. A lively hop-oily tingle persists on the palate.
Overall, damn fine drinking. Not one of your hazy over-the-top NEIPA’s, this is a clean and bright, bracingly bitter, flawlessly executed but more traditional American IPA.
