As has been customary, the fourth entry has been and continues to be a dark entry. Bottle conditioning for 18 months, this particular arrangement is woven from threads including Biere de Norma, Edith, and E., barrels whose lineage ranged from Flora Cuvee and Vera Mae to Sue and Juicy. These components were composed and then dry-hopped with personally selected Motueka hops from Freestyle Farms, our agricultural partners in Upper Moutere, New Zealand, as well as Hersbrucker and Mittelfrüh from Seitz Farm—our agricultural partner in Wolnzach, Germany.

750ml bottle, blend #32, poured into a stemless wine glass. Enjoyed on 04.19.23, reviewed from Tasting Journal.
The beer pours a dark cola brown color, deep amber hues, fairly clear with a bone colored head that offers modest retention and spotted lacing. The aroma is nice, earthy oak, musty funk, dry leaves, grass, citrus peel, dark grain, leather, and stone fruits. The flavors are good, hearty dough, brown breads, amber grain, earthy oak barrel, musty oak that brings out some floral and fruity qualities, lingering leather dirtiness. The mouthfeel is good, coating, lively medium body, moderate tartness with a crisp finish.
Verdict: A nice dark saison blend from Hill Farmstead. Earthy, funky, hearty but with some pleasant brightness.

This one pours a dark brown, nearly black color, with a small head, and lots of lacing.
This smells like black cherry, roasted malt, dark chocolate, balsamic vinegar, citrusy funk, leather, oak, and breadiness.
This is an extremely intriguing blend - one of the most unique yet. The typical stuff you expect to see out of Norma or Edith are in there - damp woodsy funk, earthiness, roasted malt, toffee, chocolate, etc. But the addition of E and the dry hopping is super interesting and unique here - there's a lemon, lime, and orange-y hop character here, with a touch of balsamic and lemony acidity.
This is medium bodied, creamy but effervescent, with a good drinkability and a manageable acidity.
This is one of the most complex blends that I've had yet from this series. It was delicious.

This is an extremely intriguing blend - one of the most unique yet. This is medium bodied, creamy but effervescent, with a good drinkability and a manageable acidity.

750 mL bottle. Deep brown. Smells of bright citrus hop, roasted malt and coffee. Tastes of strong dry hops. Citrus, grapefruit, wine, oak, chewy grapefruit dry hop finish. Acetic spike in the back end. Medium body. Neat variation on the dark saison. Works well. The hops seem to emphasize the acetic component

Appearance: Pours tea colored with a one finger ecru head; decent retention with squiggles and dots of lace
Smell: Pumpernickel bread, leather, oak and Rhone red wine tones
Taste: Multi-layered complexity, with a layer of pumpernickel and leather, a layer of farmhouse funk and a layer of oak with lingering Rhone wine elements; the flavors don't progress as much as they intermingle
Mouthfeel: Medium body with moderate carbonation; a touch of tartness on the finish
Overall: Beers like this are what sets Hill Farmstead apart; lots of folks can make a great IPA or stout but only a few breweries can make a beer like this
