For the thirteenth in our ongoing series of experimental stouts, we selected two barrels of an imperial stout brewed in honor of batch #1,000—a 33º American-style sweet imperial stout that spent more than 28 months in bourbon barrels. The beer was then paired with two different variants of coffee beans grown at Finca Los Rodriguez in Bolivia, sourced and roasted by our longtime friends at The Coffee Collective in Copenhagen.

Rich dark brown/black appearance with a dense moderate tan head, moderate retention, some lacing. Dark roast coffee, bourbon, fig, sweet malt. Thick body, medium carbonation. Lovely!

This one pours a very dark black color, with a tiny head, and not much lacing at all.
This smells like coffee, caramel, prune, dark chocolate, oak, and vanilla.
I definitely want more barrel on this one - it's kind of sweet, at least compared to the typical Hill Farmstead stout. More barrel would help balance that. The coffee character is really great, though - creamy, vanilla, caramel, very chocolatey, some fruitiness.
This has very, very low carbonation. It's not still, but it's just a small step away from that. It's quite creamy, with no real booziness to it.
This wasn't my absolute favorite from this series, but it was still worth a try anyway, and used the coffee excellently.
