Originally brewed on the June Solstice of 2012 with our Danish friends Peter Sonne of Flying Couch and Christian Skovdal Andersen of Beer Here, this Farmstead® amber ale pays tribute to those early years and their continuing friendship. We have created this new iteration to honor that deep and abiding connection.

Tried blind side-by-side Sankt. This one was much more refreshing, drinkable, and visually appealing with a nice thick layer of off-white head produced with a moderate pour. Not particularly complex in the flavors -- it's a malt-forward amber ale with the characteristic Hill Farmstead mixed fermentation treatment. Not too sour, sharp, or barnyardy. Just delicate with a light brettanomyces character. Main downside (for both) was the aroma, which I found smelled a lot like raw ground chicken

750ml bottle from April 2022.

Pours hazy amber with an inch-plus head of white. Moderate retention and lacing. Pineapple skins, faint toffee, minerally funk in the nose. Medium bodied with a crisp mouthfeel. Mildly tart on the palate with a caramel base. Finishes faintly sweet with caramel apples.

Bottle conditioning since April 7, 2022
Pours a frothy foamy 1 finger head with good retention, plenty of soapy lacing, slight clear semi hazy orange to copper color

Nose nice sour funky bacteria souring, some barnyard Brett funk as well, a bit of citrus, grapefruit, some general stone fruit, tart fruit, general tangy a bit of buttery oak and more of the oaked Chardonnay like characters,

Taste starts off sour as expected, more bacteria souring funk, a little barnyard funk with that, lots of fruit with stone fruit, a bit of citrus, tangelo like and a bit of apricot, a bit of lemon-lime zest, a little toasted oak but more of the buttery oak and a little tart white wine, again oaked Chardonnay, grapefruit, then some spicy notes, mellowed funk late, more tartness, acidity lingering, flemmy finish as expected

Mouth is med bod, med to higher frothy carb, bright acidity

Overall nice, although I think I liked the barrel character a bit more on the Sankt

I guess this deserves a new entry since it no longer has grassroots on the label. This most recent 2023 batch is incredible
