this biere de saison series was incredible, all of the beers we had from it were so unique and interesting on a fermentation level, and so well refined and delicate to drink on. this was the most modern tasting of the ones we had, the most new school and dry hoppy, and even though centennial isnt one of the cool kid hops right now, this beer could stand out in any american funky hoppy beer tasting i think. the base beer is simple and light, pale straw colored and lightly hazy with a lively head from the bottle. there is a cool yeast element to this thats neither sour nor overly wild, but definitely rustic and old worldy, and most importantly to me in a beer like this, unique and different. maybe some brett taking hold, but its more of a soft french saison type, mellow with some vinous and spicy elements and a little floral aspect and gentle funkiness, nice on top of such a clean and delicate grain base. the hops here present themselves much differently than i am used to from centennial, not a hop i usually describe as juicy, but here i get like wet orange flesh, pineapple, and sweet white wine, unexpected from this varietal, but its all there. a cool sort of peachy taste to it, some oils, and a bit of bitterness at the end. the hops are expertly dosed here, both for getting such a unique profile out of a hop i thought i knew everything about, and for not overdoing it. its definitely hop driven and dry hoppy, but it doesnt come at the expense of the interesting yeast or the light drinking nature of the beer overall. awesome carbonation, very dry, and only the fruity aspect of the hops lingering. smartly built, mature, delicate, unique, and delicious!
