This is the art of ale blending writ well.
Being a fuddy-duddy, I am shy of ales Wild. Often they are too sour and shrivel my buds.
Not so with Pear Therapy. Cascade blended a triple that had been aged in a barrel with a single blonde and pears and ginger were added to create a nice, drying tart. It never gets sour (because I would complain if it did.)
I've only had three Cascade ales (two were on the "1001" list, so I had to drink them.) But, I still owe them a mini-review for their mastery. They started Cascade because they wanted to give aficionados an intense taste experience that used something other than hops. They succeeded and have developed an intense following over 25 years. And for that, I give them pretty good Overall Hugs. A Votre Sante'... or however that is said in Portland.
