This was the star/MVP of the Christmas in July taplist; the aroma and flavors were all the sweeter aspects of the Pappy wheated bourbon recipe balanced perfectly with the malty backbone of Pinko!

Damn! This takes an average RIS and turns it up to 11. Easily the best variant of Pinko made and if they bottled this, it would have a trade value north of $100. I got to try a full pint of this at the Christmas in July party and it was worth all of the intense heat and humidity that day to try this magnificent brew.

Appearance: Very dark brown, almost black color, with a fine, dark tan head.

Aroma: Caramel, vanilla, bourbon, oak, and chocolate aromas.

Taste & Mouthfeel: Dark chocolate and caramel on the tongue, with a thick, smooth texture. Some vanilla makes its way into the mix as well, as the finish moves into a very strong, bitter, dark chocolate/coffee flavor. You definitely taste the alcohol here, which makes the bitterness in the finish feel a bit astringent, like oils from pressed coffee beans/grounds, and less like an earthy, dark chocolate. Imagine a chocolate covered bourbon caramel, and you’ll know what this beer tastes like!

Final Word: If they ever make this again, make sure you are one of the few who get to try it! This beer was aged in Pappy Van Winkle 23 barrels, which is as close as any of us will probably ever get to that bourbon. The result is very well balanced, full flavored, rich, and complex. This is one of those beers with complex flavors you can continue to unpack well into the glass, and they all exist in near perfect balance and harmony. The effect is like a decadent dessert in a glass, as you’ll find yourself savoring every rich sip of this beer. My only complaint is that the ABV came through a bit much in the flavor, which added a slight astringency to the bitterness on the finish. However, this does not take away from the overall quality of this brew and it remains a MUST TRY for anyone who likes coffee, dark chocolate, vanilla, caramel, and bourbon flavors!
