Saison Milieu is blend of young Nelson Sauvin dry-hopped saison and 10 month old barrel fermented saison that we made in collaboration with our good friends at Embrace The Funk / Yazoo Brewing Company.
Drinking this beer reminds me of funky gooseberry La Croix, that time you chewed a piece of orange Fruit Stripe while on horseback and listening to the cassette of Taper’s Choice vol. 2 in an early aughts Toyota Sienna.

I had this on draft 1/10/23 @ the Hopleaf.
See-through yellow appearance; champagne bubbles throughout.
Minimal bright white head; minimal lace.
Mildly tart peach, lemon peel & honeyed grain notes in the nose.
Medium thin mouthfeel.
Lemon, mild peach & faint honeyed grain flavors.
Tart, pleasant...borderline delightful!

I have an interesting relationship with Perennial, a gifted micro. They make their money in American IPA and stout styles. But all 10 ales I've had from them are Belgian-inspired and all probably showed me that Perennial also is inspired by the Belgian tradition. Quality in this portfolio combination is rare.
Saison Milieu doesn't start that way: its Looks are average, not a lively saison. However, Smells and Tastes are totally integrated around a mild strain of Brett and are balanced: fruity, yet tart. Because their is a price to that type of balance, the mouth is a notch lower and could use some bubbles.
As for my exuberant OA rating, that's for Perennial. Being a Cubs fan, I may never visit St. Louis again... but I have enjoyed their best brewer !
