an absolutely gorgeous saison here, new school in that its not as yeast driven as the old world examples of the style, it has very little rustic charm or funk to it at all, not farmy in the classic sense, but the beer is clean and dry, and has an amazing dry hopped quality about it that really sets it apart. if its the old style saison you seek, look elsewhere, but i love the way the belgian yeast strain in this contributes notes of ripe pear and white grape, and how the hops in here are so lemony and herbaceous, there has to be some sorachi ace in here, its signature complexion is all over this one! light flowers and even dill in the finish from the hops, heavy citrus, oily but clean too, and the yeast has dried this right out, white wine and honeysuckle notes to finish. awesome carbonation and a round wheaty body, super easy drinking, full of flavor and freshness. i could see this being absolutely amazing with a brett pitch in a white wine barrel or something, but really, its pretty evolved as it is despite the relative lack of traditional yeast complexity. i liked this one a lot, but you could put sorachi ace hops in almost anything and i would love it. clever beer, worth seeking out before its gone!
